Shaker Lemon Meringue Pie

Ingredients
- 1 cup sugar
- 4 1/2 tablespoons flour
- 1/8 teaspoon salt
- 2 teaspoons grated fresh lemon rind
- 3 egg yolks, save the whites
- 1 1/4 cups hot water
- 2 tablespoons butter
- 1/4 cup lemon juice
- 9 inches pie shells, baked
Recipe
- 1 mix sugar, flour and salt.
- 2 add water gradually,.
- 3 beat egg yolks and add to sugar mixture.
- 4 cook for 10 min on low stirring until thick.
- 5 add butter, lemon juice, and rind.
- 6 cook 2 minutes .
- 7 cool.
- 8 pour into baked pie shell.
- 9 cover with meringue and brown.
- 10 bake at 400* until meringue is brown.
