The Easiest, Healthiest Chocolate Cake...ever

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups flour
  • 1 cup artificial sweetener, of your choice (refined sugar, beet sugar, unrefined sugar, sugar substitute)
  • 4 1/2 tablespoons unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 1 cup cold water
  • 1 cup powdered sugar
  • 4 1/2 teaspoons milk or 4 1/2 teaspoons soymilk
  • 1/4 teaspoon vanilla

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 mix all dry ingredients in a 9 inch round pan or 8-inch square pan.
  • 3 add the rest of the ingredients*excluding the last three* and stir, mixing thoroughly and scraping the sides and bottom of pan well.
  • 4 bake 35-40 minutes or until toothpick comes out clean.
  • 5 cool for about 35 minutes.
  • 6 run knife around pan edges and turn upside down; tap to release cake.
  • 7 cool completely.
  • 8 mix the last three ingredients together in a plastic ziplock bag by squeezing until uniform.
  • 9 cut the corner of the bag and drizzle icing over cake.
