Ingredients

- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 2 garlic cloves, finely chopped
- 3 cups chicken broth
- 2 tablespoons chopped fresh cilantro or 1/2 teaspoon ground coriander
- 2 tablespoons fresh squeezed lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper sauce (sarachi)
- 3 (15 ounce) cans great northern beans
- 2 cups cooked chicken breasts, chopped
- sour cream
- shredded monterey jack cheese
Recipe
- 1 heat oil in 4 quart pot over medium heat. cook onions and garlic, stirring occasionally, until onions are tender.
- 2 stir in remaining ingredients except for chicken. bring to a boil and reduce heat.
- 3 simmer uncovered for 20 minutes.
- 4 stir in chicken and simmer until chicken is hot.
- 5 top with shredded montery jack cheese and a dollop of sour cream before serving.
