Chili

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 2 garlic cloves, finely chopped
  • 3 cups chicken broth
  • 2 tablespoons chopped fresh cilantro or 1/2 teaspoon ground coriander
  • 2 tablespoons fresh squeezed lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper sauce (sarachi)
  • 3 (15 ounce) cans great northern beans
  • 2 cups cooked chicken breasts, chopped
  • sour cream
  • shredded monterey jack cheese

Recipe

  • 1 heat oil in 4 quart pot over medium heat. cook onions and garlic, stirring occasionally, until onions are tender.
  • 2 stir in remaining ingredients except for chicken. bring to a boil and reduce heat.
  • 3 simmer uncovered for 20 minutes.
  • 4 stir in chicken and simmer until chicken is hot.
  • 5 top with shredded montery jack cheese and a dollop of sour cream before serving.
