Ingredients

- 1/2 lb bacon
- 1/2 lb onion, chopped
- 1/2 cup bisquick
- 3 eggs
- 1 3/4 cups milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup cheddar cheese or 1/2 cup swiss cheese, shredded
Recipe
- 1 heat oven to 375 degrees f.
- 2 grease 1 1/2-quart round casserole dish.
- 3 cut bacon slices into thirds. cook and stir bacon in 10-inch skillet over medium heat until almost crisp.
- 4 add onion. cook, stirring frequently, until bacon is crisp; drain.
- 5 spread bacon and onion in the bottom of the casserole dish.
- 6 beat the bisquick, eggs, milk, salt and pepper with hand beater until almost smooth.
- 7 slowly pour egg mixture over bacon and onion; sprinkle with cheese.
- 8 bake uncovered until knife inserted in center comes out clean, about 35 minutes.
