John's Popovers

Ingredients
- 284 g flour, sifted
- 2 cups milk
- 2 tablespoons oil
- 1/2 teaspoon salt
- 4 eggs
Recipe
- 1 preheat the oven to 450°f.
- 2 grease popover pans.
- 3 mix the eggs.
- 4 add the oil.
- 5 the idea is to mix - don't beat or you will get no action in the oven!
- 6 add 1/2 the milk.
- 7 add the salt
- 8 put the popover pans in the oven to preheat.
- 9 add the flour gradually so as to avoid lumping.
- 10 add the remainder of the milk.
- 11 the mix should be smooth and the consistency of heavy cream - again, don't beat.
- 12 fill the popover pans - we use a pitcher to do it quickly - don't want the pans to cool down!
- 13 bake for 15 minutes at 450°f.
- 14 cut the heat to 350f and bake 15 - 20 minutes or until crispy brown.
