Katy's Crab Cakes

Ingredients



  • Servings: 6

  • 2 tablespoons butter

  • 2 tablespoons minced onions

  • 1 cup herb stuffing mix

  • 1 lb crabmeat, cartilage removed

  • 1 egg, beaten

  • 1 teaspoon dry mustard

  • salt and pepper

  • flour

  • butter (for cooking)


Recipe



  • 1 melt butter in skillet over medium heat.

  • 2 saute onion until opaque, but not brown, about 2 minutes.

  • 3 in a large bowl, combine stuffing with crab, egg, mustard, salt and pepper, mixing well.

  • 4 stir in onion.

  • 5 shape mixture into 6 flat cakes.

  • 6 sprinkle each lightly with flour (do not dredge).

  • 7 brown quickly in butter, reduce heat, and cook gently for 5 minutes.

  • 8 serve immediately.
