Potato Soup

Total Time: 3 hrs
Preparation Time: 1 hr
Cook Time: 2 hrs


Ingredients



  • Servings: 30

  • 10 lbs potatoes

  • 1/2 gallon heavy whipping cream

  • 1 gallon whole milk

  • 1 lb bacon

  • 1/4 cup bacon grease

  • 2 1/2 cups dried onion, minced

  • 1 lb butter

  • 1/8 cup salt

  • 1/8 cup pepper


Recipe



  • 1 wash and peel potatoes.

  • 2 cook bacon until completely crispy.

  • 3 drain bacon, and keep 1/4 cup bacon grease.

  • 4 cut potatoes into quarters.

  • 5 crush bacon into small pieces.

  • 6 combine all ingredients in a large stock pot.

  • 7 heat over medium heat until the soup comes to a boil stirring frequently. lower heat to low and continue to simmer until the potatoes are soft stirring regularly.
