Stuffed Avocados

Ingredients

  • Servings: 3
  • 100 g walnuts, in their shells
  • 100 g hazelnuts, in their shells
  • 4 avocados, ripe
  • 1 celery, trimmed and cut to matchstick sticks
  • 2 tablespoons tomato paste, sauce
  • 1 tablespoon wine vinegar
  • salt and pepper, to tast

Recipe

  • 1 shell the walnuts and dip into boiling water for a few minutes: drain and finely chop, but leaving a few whole walnuts for garnish. prepare hazelnuts in the same way, leaving a few hazelnuts for garnish.
  • 2 cut 3 of the avocado's in half lengthways, remove the stones and arrange on a serving dish.

  • 5 fill the centres of the halved avocados with the mixture and serve garnished with the reserved nuts.
