Tortilla Black Bean Cassarole

Ingredients
- Servings: 6
- 2 cups chopped onions
- 1 1/2 cups chopped green peppers
- 1 (14 ounce) can diced tomatoes
- 3/4 cup picante sauce
- 2 garlic cloves
- 2 teaspoons ground cumin
- 2 (15 ounce) cans black beans
- 12 tortillas
- 2 cups monterey jack cheese
- diced tomato
- diced green onion
- salsa
- sour cream
- shredded lettuce
- olive
Recipe
- 1 in large skillet combine first 6 ingredients. bring to boil, reduce & simmer uncovered 10 minutes. add drained & rinsed beans.
- 2 in 13x9 pan layer 1/3 bean mixture, 6 of the tortillas*, 1 c cheese, 1/3 bean mixture, 6 tortillas, last 3rd of bean mixture. (*overlap tortillas as necessary).
- 3 cover & bake 350 for 30 minutes. remove cover, spread last cup of cheese & return to oven for 10 minute
- 4 remove and let stand 10 minutes before cutting. serve with optionals.
