Tortilla Black Bean Cassarole

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 cups chopped onions
  • 1 1/2 cups chopped green peppers
  • 1 (14 ounce) can diced tomatoes
  • 3/4 cup picante sauce
  • 2 garlic cloves
  • 2 teaspoons ground cumin
  • 2 (15 ounce) cans black beans
  • 12 tortillas
  • 2 cups monterey jack cheese
  • diced tomato
  • diced green onion
  • salsa
  • sour cream
  • shredded lettuce
  • olive

Recipe

  • 1 in large skillet combine first 6 ingredients. bring to boil, reduce & simmer uncovered 10 minutes. add drained & rinsed beans.
  • 2 in 13x9 pan layer 1/3 bean mixture, 6 of the tortillas*, 1 c cheese, 1/3 bean mixture, 6 tortillas, last 3rd of bean mixture. (*overlap tortillas as necessary).
  • 3 cover & bake 350 for 30 minutes. remove cover, spread last cup of cheese & return to oven for 10 minute
  • 4 remove and let stand 10 minutes before cutting. serve with optionals.
