Ultimate Tapioca Pudding!

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 2 egg whites
  • 4 tablespoons sugar
  • 2 egg yolks
  • 1 cup milk
  • 5 tablespoons sugar
  • 6 tablespoons tapioca (minute)
  • 1/4 teaspoon salt
  • 5 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 (15 ounce) can peaches

Recipe

  • 1 beat egg whites with 4 t sugar until stiff and set aside.
  • 2 mix egg yolks in sauce pan with 1 cup milk until well blended.
  • 3 add tapioca, salt, remaining sugar and remaining milk. cook over med/low heat stirring constantly until full boil is reached. boil must remain while still stirring.
  • 4 remove from heat and add vanilla.
  • 5 pour a small amount of the tapioca into the egg whites and fold together. gradually add the rest.
  • 6 may be placed in dessert cups to cool. place saran wrap over bowl, touching the entire surface of the pudding to prevent skim top.
  • 7 top with canned peaches.
