Ultimate Tapioca Pudding!

Ingredients

- 2 egg whites
- 4 tablespoons sugar
- 2 egg yolks
- 1 cup milk
- 5 tablespoons sugar
- 6 tablespoons tapioca (minute)
- 1/4 teaspoon salt
- 5 tablespoons sugar
- 1 teaspoon vanilla
- 1 (15 ounce) can peaches
Recipe
- 1 beat egg whites with 4 t sugar until stiff and set aside.
- 2 mix egg yolks in sauce pan with 1 cup milk until well blended.
- 3 add tapioca, salt, remaining sugar and remaining milk. cook over med/low heat stirring constantly until full boil is reached. boil must remain while still stirring.
- 4 remove from heat and add vanilla.
- 5 pour a small amount of the tapioca into the egg whites and fold together. gradually add the rest.
- 6 may be placed in dessert cups to cool. place saran wrap over bowl, touching the entire surface of the pudding to prevent skim top.
- 7 top with canned peaches.
