Kittencal's Oven-baked Onion And Mushroom Rice

Total Time: 1 hr Preparation Time: 5 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups instant uncooked minute rice
  • 1 (2 ounce) package dry onion soup mix
  • 3 cups water
  • 1/4-1/3 cup low sodium soy sauce (use low sodium soy sauce only)
  • 1 (10 ounce) can sliced mushrooms, drained
  • 2 tablespoons oil
  • 1/2 teaspoon garlic powder (or to taste)
  • 1/2 teaspoon fresh ground black pepper
  • 2 green onions, chopped (optional)

Recipe

  • 1 preheat oven to 350 degrees f (set oven rack to second-lowest position).
  • 2 grease a medium baking dish.
  • 3 in a large bowl combine all ingredients together.
  • 4 transfer into baking dish.
  • 5 cover and bake for 15 minutes, remove from oven; stir with a spoon.
  • 6 return to oven and bake covered for another 45-50 minutes or until rice is cooked.
  • 7 remove from oven, let sit for 15 minutes on top of stove.
  • 8 stir in the green onions (if not using the green onions then fluff with a fork before serving).
