Kugeli

Total Time: 5 hrs Preparation Time: 3 hrs Cook Time: 2 hrs

Ingredients

  • 5 lbs potatoes, finely grated
  • 3 medium onions, finely grated
  • 1 lb bacon, cut and fried, all fat reserved
  • 6 eggs
  • salt
  • pepper
  • sour cream (optional)

Recipe

  • 1 preheat oven to 350ºf.
  • 2 peel potatoes and onions.
  • 3 in a large mixing bowl, hand grate potatoes and onions using the smallest grate holes.
  • 4 texture should be "mushy" and moist. (note: a food processor set on the smallest setting can be used for this step, but the texture will not be as mushy.).
  • 5 cut bacon into small pieces and fry in a medium skillet until crisp.
  • 6 pour bacon (including grease) into potato mixture.
  • 7 in a small mixing bowl, beat eggs with a fork.
  • 8 pour eggs into potato mixture.
  • 9 butter (or spray with pam) 2 meatloaf pans.
  • 10 divide potato mixture evenly between the 2 pans.
  • 11 bake for 2 hours.
  • 12 slice as you would a meatloaf and serve topped with sour cream (if desired).
