Chef John's Homemade Mayonnaise


Ingredients



  • Servings: 16

  • 2 egg yolks

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon white vinegar

  • 1 teaspoon dijon mustard

  • 3/4 teaspoon salt

  • 1/8 teaspoon white sugar

  • 1 cup vegetable oil

  • 1/2 cup olive oil
