- 3 tablespoons butter
- 1 teaspoon finely chopped onion
- 3 tablespoons flour
- 1 cup hot milk
- 1/4 cup parmesan cheese
- 1 teaspoon chopped parsley
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon nutmeg
- 1 egg yolk
- 1 cooked turkey breast
- 4 slices cooked thick bacon
- 1 tomato
- 2 slices texas toast thick bread
Recipe
- 1 for the sauce.
- 2 melt butter in a saucepan over medium-low heat; add chopped onion. cook over low heat until onion has softened. stir in flour and cook, stirring, until smooth. gradually add milk, stirring constantly. add remaining ingredients; cook, stirring, until cheese is melted and sauce is smooth. beat egg yolk in a small bowl; add about 1/4 cup of the hot liquid to it, stirring constantly. pour egg yolk mixture into the hot liquid; stir until the sauce is smooth and hot. to reduce the risk of curdling, a double boiler can be used after the onions are cooked.

- 4 heat oven to 400 f, in a shallow backing dish add texas toast, layer with turkey breast. pour a generous amount of sauce. top with a slice of tomato and 2 strips bacon. repeat for second hot brown. place in oven 10-15 minutes or until sauce in starting to brown on edges.
