Hot Browns

Ingredients



  • 3 tablespoons butter

  • 1 teaspoon finely chopped onion

  • 3 tablespoons flour

  • 1 cup hot milk

  • 1/4 cup parmesan cheese

  • 1 teaspoon chopped parsley

  • 1/2 teaspoon salt

  • 1/2 teaspoon fresh ground black pepper

  • 1/4 teaspoon nutmeg

  • 1 egg yolk

  • 1 cooked turkey breast

  • 4 slices cooked thick bacon

  • 1 tomato

  • 2 slices texas toast thick bread

  • 1 for the sauce.

  • 2 melt butter in a saucepan over medium-low heat; add chopped onion. cook over low heat until onion has softened. stir in flour and cook, stirring, until smooth. gradually add milk, stirring constantly. add remaining ingredients; cook, stirring, until cheese is melted and sauce is smooth. beat egg yolk in a small bowl; add about 1/4 cup of the hot liquid to it, stirring constantly. pour egg yolk mixture into the hot liquid; stir until the sauce is smooth and hot. to reduce the risk of curdling, a double boiler can be used after the onions are cooked.

  • 3 making the hot brown.

  • 4 heat oven to 400 f, in a shallow backing dish add texas toast, layer with turkey breast. pour a generous amount of sauce. top with a slice of tomato and 2 strips bacon. repeat for second hot brown. place in oven 10-15 minutes or until sauce in starting to brown on edges.
