Raspberry Bars

Ingredients



  • Servings: 24

  • 1 1/2 cups flour

  • 1 cup brown sugar, packed

  • 1 teaspoon salt

  • 2 cups quick-cooking oatmeal

  • 1 cup butter

  • 1 1/2 cups seedless raspberry jam (*)

  • 1/2 cup chopped pecans


Recipe



  • 1 preheat oven to 375°f.

  • 2 in a large bowl, combine flour, sugar, salt and oatmeal.

  • 3 cut in all but 2 tablespoons butter.

  • 4 press 1/2 of flour mixture evenly into a greased 13x9" pan.

  • 5 spread jam over batter in pan, then top with remaining flour mixture.

  • 6 dot with 2 tablespoons butter and with chopped pecans.

  • 7 bake for 20-25 minutes.

  • 8 let cool completely, then cut into triangles.

  • 9 *variation: use other types of jam such as strawberry, blueberry or apricot.
