Ingredients

- 1 1/2 lbs catfish fillets
- 1 egg, beaten
- garlic salt
- 1/2 cup flour
- 1/2 cup cornmeal
- salt and pepper
- cayenne pepper
- vegetable oil (for frying)
Recipe
- 1 heat a heavy skillet with 1-inch of oil.
- 2 wash the catfish.
- 3 beat the egg.
- 4 lightly pepper and garlic salt the fish.
- 5 mix the flour and cornmeal together; add salt and pepper to flour mix and stir to combine.
- 6 dip the catfish in egg.
- 7 dip in the breading twice.
- 8 put the fish in hot oil.
- 9 cook until golden brown and tender in the middle, about 8-12 minutes.
- 10 drain on paper towels.
- 11 optional: sprinkle with louisiana hot sauce.
