Swordfish-fruit Kabobs

Total Time: 53 mins Preparation Time: 40 mins Cook Time: 13 mins

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon rosemary, crushed
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 lbs swordfish steaks
  • 1 small pineapple
  • 3 medium nectarines

Recipe

  • 1 combine first 7 ingredients to make a marinade.
  • 2 cut swordfish into 2" chunks.
  • 3 marinate fish at least 30 minutes.
  • 4 cut pineapple to have 16 chunks.
  • 5 cut nectarines into quarters.
  • 6 thread pieces onto skewers.
  • 7 grill 10-15 minutes, brushing with marinade and turning often.
