Kittencal's Melt-in-your-mouth Scottish Shortbread

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 25
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar, plus
  • 2 tablespoons sugar
  • 3/4 cup salted butter, softened
  • 3/4-1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract (optional)

Recipe

  • 1 set oven to 300 degrees f (set oven rack to second-lowest position).
  • 2 lightly butter an 8 x 8-inch baking dish or a 9-inch pie plate.
  • 3 using clean hands blend together all ingredients until well combined (batter will be stiff).
  • 4 press into prepared baking dish.
  • 5 prick holes all over the batter.
  • 6 bake for about 25-30 minutes or until golden on the edges.
  • 7 while the shortbread is still warm slice into squares or wedges if using a pie plate.
