Kittencal's Melt-in-your-mouth Scottish Shortbread

Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar, plus
- 2 tablespoons sugar
- 3/4 cup salted butter, softened
- 3/4-1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract (optional)
Recipe
- 1 set oven to 300 degrees f (set oven rack to second-lowest position).
- 2 lightly butter an 8 x 8-inch baking dish or a 9-inch pie plate.
- 3 using clean hands blend together all ingredients until well combined (batter will be stiff).
- 4 press into prepared baking dish.
- 5 prick holes all over the batter.
- 6 bake for about 25-30 minutes or until golden on the edges.
- 7 while the shortbread is still warm slice into squares or wedges if using a pie plate.
