Lactose-free Mashed Potatoes (maybe Vegan)

Ingredients

- 3 lbs potatoes (about 4 large)
- 1/2 teaspoon salt
- 2 tablespoons lactose-free butter (i use earth's best)
- 2 tablespoons lactose-free cream cheese (i use tofutti's better than cream cheese)
- 2 tablespoons lactose-free sour cream (i use tofutti's again)
- 1/4 cup plain soymilk
- 3/4 teaspoon salt (optional)
- 1 teaspoon garlic powder (optional)
- 1/2 teaspoon paprika (optional)
Recipe
- 1 peal the potatoes and cut into small chunks.
- 2 place potatoes in a saucepan; add water to cover and 1/2 teaspoon salt.
- 3 bring to a boil; cover, reduce heat to medium and simmer for 25 minutes or until potatoes are tender.
- 4 drain the potatoes.
- 5 in a stand mixer on in a mixing bowl w/ an electric mixer mix together the butter, cream cheese, sour cream, and soy milk. once well blended add the salt, garlic powder and paprika or favorite mash potato seasonings.
- 6 add in the potatoes and mix until all ingredients are blended.
- 7 great served with gravy.
