Ladolemono (a Simple Sauce For Fish)

Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lemon juice (only fresh!)
- 1 generous teaspoon dijon mustard (or similar mustard)
- 1 generous teaspoon finely-minced fresh parsley (optional)
- 1/2 teaspoon dried mediterranean oregano
- salt and pepper, to taste
Recipe
- 1 whisk together all the ingredients in a small bowl until sauce is lightly emulsified. serve over your favourite fish that has been simply-prepared.
