Stuffed Croissant French Toast

Total Time: 54 mins Preparation Time: 30 mins Cook Time: 24 mins

Ingredients

  • Servings: 6
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons vanilla
  • 12 medium day-old croissants
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 pint strawberry, thinly sliced
  • butter

Recipe

  • 1 in a bowl, whisk together the eggs, milk, and vanilla; pour into a 13 x 9 inch pan.
  • 2 slice each croissant almost completely through horizontally.
  • 3 with a hand mixer, mix together the cream cheese and powdered sugar.
  • 4 spread a layer of cream cheese mixture on the inside surface of each croissant.
  • 5 place strawberry slices over cream cheese mixture and press lightly to secure.
  • 6 close the croissants and place in the 13 x 9 inch pan; soak each side 2-3 minutes.
  • 7 melt a little butter in a small frying pan; place croissant in pan; cover and cook 1 minute on each side, or until lightly browned.
  • 8 serve immediately sprinkled with powdered sugar.
