Stuffed Croissant French Toast

- 2 eggs
- 1 cup milk
- 2 teaspoons vanilla
- 12 medium day-old croissants
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 pint strawberry, thinly sliced

Recipe
- 1 in a bowl, whisk together the eggs, milk, and vanilla; pour into a 13 x 9 inch pan.
- 2 slice each croissant almost completely through horizontally.
- 3 with a hand mixer, mix together the cream cheese and powdered sugar.
- 4 spread a layer of cream cheese mixture on the inside surface of each croissant.
- 5 place strawberry slices over cream cheese mixture and press lightly to secure.
- 6 close the croissants and place in the 13 x 9 inch pan; soak each side 2-3 minutes.
- 7 melt a little butter in a small frying pan; place croissant in pan; cover and cook 1 minute on each side, or until lightly browned.
- 8 serve immediately sprinkled with powdered sugar.
