Yukon Gold Scallion Smashers

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 lbs yukon gold potatoes
  • 4 tablespoons butter, melted
  • 1 cup milk, heated
  • 1 bunch scallion, diced
  • salt and pepper

Recipe

  • 1 wash potatoes and place in pot with enough water to cover. bring to a boil and cook until tender when pierced with a fork, 40-50 minutes.
  • 2 drain and place in a large mixing bowl. add milk, butter, scallions and mash, blending well. season with salt and pepper to taste.
  • 3 serve piping hot.
