Two-cheese Spinach Bake

Ingredients

- 1 cup all-purpose flour
- 2 eggs, lightly beaten
- 1 cup milk
- 1/4 cup butter or 1/4 cup margarine, melted
- 1/2 small onion, chopped
- 2 tablespoons grated parmesan cheese
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 cup shredded monterey jack cheese
- 1/2 cup shredded cheddar cheese
Recipe
- 1 in a large bowl, whisk the flour, eggs, milk, butter, onion, parmesan cheese, garlic, salt and cayenne until combined.
- 2 fold in spinach and both monterey jack and cheddar cheese.
- 3 transfer to a greased 1-1/2-qt. baking dish.
- 4 bake, uncovered, at 350 degrees for 40 minutes, or until a knife inserted near the center comes out clean. serve immediately.
