Two-cheese Spinach Bake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 cup milk
  • 1/4 cup butter or 1/4 cup margarine, melted
  • 1/2 small onion, chopped
  • 2 tablespoons grated parmesan cheese
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded monterey jack cheese
  • 1/2 cup shredded cheddar cheese

Recipe

  • 1 in a large bowl, whisk the flour, eggs, milk, butter, onion, parmesan cheese, garlic, salt and cayenne until combined.
  • 2 fold in spinach and both monterey jack and cheddar cheese.
  • 3 transfer to a greased 1-1/2-qt. baking dish.
  • 4 bake, uncovered, at 350 degrees for 40 minutes, or until a knife inserted near the center comes out clean. serve immediately.
