Cracker Pecan Pie

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 4 egg whites
  • 24 'jatz' biscuits or 24 other crackers, crushed
  • 1 cup caster sugar
  • 115 g pecans, finely chopped

Recipe

  • 1 beat egg whites till very frothy.
  • 2 gradually add sugar.
  • 3 beat till mixture is stiff and shiny.
  • 4 fold in crushed crackers and pecans.
  • 5 cook in greased 9 inch pie dish.
  • 6 bake at 160 c for 40 minutes.
  • 7 cool totally then refrigerate.
  • 8 top with whipped cream and serve.
