Spicy Garlic Dill Pickles

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 36 small cucumbers
  • 1 quart vinegar
  • 2 quarts water
  • 3/4 cup pickling salt
  • 18 garlic cloves
  • 12 sprigs fresh dill (or 3t whole dill seed)
  • alum
  • 12 hot peppers (or 6 chili peppers and 6 jalepenos)

Recipe

  • 1 soak cucumbers overnight in cold water. drain and place into quart-sized sterilized mason jars so that they are firmly packed but not smashed (recipe estimate is for 6 cucumbers per jar, but naturally this will vary depending on the size of your cucumbers).
  • 2 in large pan, boil vinegar, water and pickling salt.
  • 3 pour over cucumbers in the jars.
  • 4 per jar add 2 or 3 cloves garlic, dill, 1/8 teaspoon alum, and 2 peppers.
  • 5 store in a cool dark place (i use my pantry). ready in about 30 days.

  • 1 preheat oven to 350 degrees. spray a medium casserole dish with non-stick cooking spray.
  • 2 beat eggs and milk together. add the flour and continue to beat until combined.
  • 3 fold in the green chilies and the cheese.
  • 4 pour into the casserole dish and back for 40-45 minutes.
  • 5 top with a dollop of sour cream and enjoy.

Spicy Fried Chili Peanuts

  • 1/4 cup peanut oil
  • 3 garlic cloves, thinly sliced
  • 1 lb unsalted peanuts, roasted
  • 4 tablespoons dried ancho chile powder (or any chili powder)
  • 1/2 teaspoon cayenne pepper
  • 2 -3 teaspoons salt

Recipe

  • 1 heat oil in a large skillet over very low heat. add garlic and cook until crisp and brown, stirring occasionally (15-20 minutes). do not burn. discard garlic.
  • 2 add peanuts to skillet, increase heat to medium high and shake pan until oil is absorbed by peanuts and peanut aroma is strong (5 minutes); remove from heat.
  • 3 stir in chili powder and cayenne pepper and season with salt.

Sarasota's Simple Swiss Bacon & Onion Pie

  • 2/3 lb bacon, diced and sauteed until crisp
  • 2 cups grated swiss cheese
  • 4 tablespoons grated onions
  • 1 cup buttermilk baking mix (bisquick, jiffy or similar)
  • 2 cups milk
  • 4 eggs (i used large eggs)
  • 1/2 teaspoon dried thyme
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper

  • 1 bacon -- in a small sauce pan, slowly render the bacon until golden brown and crisp. remove to a plate lined with a paper towel to drain.
  • 2 layer 1 -- in a small bowl, add the bacon, cheese and the grated onion. and this is key - grate the onion over the bowl so you get all the juice too. you want the juice from the onion.
  • 3 add the bacon, cheese and onion into a a 9 or 10" deep pie pan, sprayed with pam or any non-stick spray.
  • 4 egg mixture -- in a medium size bowl, add the milk baking mix, eggs, salt, pepper, thyme and parsley. mix well to combine and then pour on top of the bacon, cheese and onion mixture.
  • 5 bake -- 400 degrees middle shelf for 30 minutes until set.
  • 6 serve -- slice and enjoy! i love to serve this with fresh tomato slices or roasted grape tomatoes.

  • 6 cups water

  • 2 cups salsa

  • 1 1/2 cups kidney beans, undrained

  • 3/4 cup acini di pepe pasta

  • 3/4 cup sliced ripe olives

  • 1 lb cheddar cheese

  • 1 cup sour cream

  • 1 (16 ounce) package tortilla chips

  • 1 in large bowl, mix meat with seasoning mix, shape into 1-inch meatballs.

  • 2 in a 4 quart nonstick saucepan, cook meatballs turning frequently, until brown, drain.

  • 3 add water, salsa, beans with liquid & tomato paste.

  • 4 heat to boiling.

  • 5 reduce heat, simmer 10 minutes.

  • 6 return soup to boil, stir in uncooked pasta.

  • 7 boil, stirring frequently, 14 minutes.

  • 8 stir in olives.

  • 9 sprinkle each serving with cheese, top with sour cream.

  • 1 pint heavy cream

  • 8 ounces pasta

  • 6 skinless chicken breast halves (boneless)

  • 1/4 cup cajun seasoning

  • 2 -3 garlic cloves, minced

  • 1 1/2 cups chicken broth (defatted)

  • 1/4 cup olive oil

  • 1 saute garlic and onion in a frying pan that has been sprayed with vegetable spray, until onion is soft.

  • 2 add roasted peppers, sliced mushrooms, til the mushrooms cook down, add tomatoes (do not drain), cajun spice, heavy cream. simmer til sauce thickens. season with salt to taste. add more cajun spice if desired.

  • 3 place the chicken in a ziploc bag and marinate with cajun spice, salt, garlic and chicken broth, refrigerated, for 2 or 3 hours. remove chicken and discard the marinade. grill chicken on very hot, buttered grill for 12 to 14 minutes or until done.

  • 4 cook pasta, drain, and place on a platter.

  • 5 lay cooked chicken on pasta and then drizzle with sauce.

  • 1/4 teaspoon ground cumin

  • 1 teaspoon dried oregano, crumbled

  • 4 ounces corn tortilla chips (not low-fat)

  • 2 cups grated jalapeno jack cheese (8 ounces)

  • 1/4 cup chopped scallion top

  • 1/2 cup chopped fresh cilantro leaves

  • 1 cup sour cream

  • 2 -3 teaspoons finely chopped pickled jalapeno peppers

  • 1 preheat oven to 450 degrees f.

  • 2 toss turkey with lime juice and season with salt and pepper.

  • 3 heat 1 1/2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then cook bell peppers, stirring, until crisp-tender, about 3 minutes.

  • 4 transfer to a bowl. heat remaining 1/2 tablespoon oil in skillet over moderate heat and cook garlic, cumin, and oregano, stirring, 1 minute. add the beans and cook, stirring, until heated through, about 1 minute. season with salt and pepper.

  • 5 make 2 layers each of corn chips, sauteed peppers, beans, turkey, cheese, scallion, and cilantro in a 3-quart shallow baking dish. bake nachos in middle of oven until cheese is melted, 6 to 10 minutes.

Mango And Chilli Sorbet

  • 500 g very ripe fresh mango pulp (flesh of approx 3 medium mangoes)
  • 20 -40 ml lemon juice
  • 150 g caster sugar (superfine sugar)
  • 150 ml water
  • 1 egg
  • 1 small medium-hot hot chili pepper, deseeded

  • 1 in a small stainless steel saucepan, stir the sugar and water with a wooden spoon. heat on medium until the sugar has dissolved, then boil the mixture for about 1 minute. remove from the heat and allow to cool. (this can be done ahead of time and the resulting syrup kept in a tightly sealed container in the fridge.).
  • 2 chop the chilli very finely, then thoroughly bruise in a small mortar and pestle.
  • 3 place the mango flesh, sugar mixture (syrup) and chilli in a blender. use the lemon juice to rinse the last little bit of chilli juice from the mortar and pestle and add that to the blender too.
  • 4 blend the mango mixture until smooth.
  • 5 beat the egg in a large bowl until almost stiff.
  • 6 stir the mango mixture into the egg until well mixed.
  • 7 freeze the sorbet in an icecream maker. remove from the icecream maker when thick and store in an airtight container in the freezer for up to 3 days (the fewer the better).
  • 8 the sorbet may need to stand at room temperature for a few minutes before serving, but this time will be minimised if the sorbet is made less than a day before it will be served.

Southern Lamb Barbecue (for Sandwiches)

  • 10 -12 lbs lamb roast (2 shoulder or butt roasts, about 5-6 pounds each, bone-in)

  • 1/8 cup lamb seasoning ("rub", see directions)

  • 8 tablespoons butter, melted

  • 20 ounces barbecue sauce (i use sweet baby ray's brand)

  • water


Recipe



  • 1 rub the roasts on all sides with the meat rub. if you don't have one already, try: spicy rib rub for lamb roast. commercial rubs are also available and work just fine.

  • 2 on a gas or charcoal grill, over high heat, sear/brown the roasts on all sides (10-15 minutes total).

  • 3 after roasts have been seared, place them in a large roaster pan, elevating them above the bottom of the pan with a small grill or with oven-proof plates. pour 12 ounces of water into the bottom of the roasting pan. top the roasts with the melted butter.

  • 4 in an oven pre-heated to 275°f, allow the roasts to bake, covered, for 6 hours. at the end of 3 hours, turn the roasts.

  • 5 at the end of the 6 hours, check the roasts for tenderness. the bone should freely release from the meat when done. if the roast is still rubbery, allow it to continue to roast, covered, for up to 2 more hours.

  • 6 when the roasts are tender, allow them to cool on a platter and then de-bone and de-fat the meat. break up all pieces of meat. place the meat in a large cooking pot, add about 4 ounces of water and bring to a simmer.

  • 7 just as the meat begins to re-heat, start adding barbecue sauce a little at a time, stirring it in carefully. when it gets enough barbecue flavor, stop adding sauce! it's easy to add too much and you may not need the full 20 ounces, depending on your own personal tastes.

  • 8 serve on good sandwich buns, topped with coleslaw.

  • 9 note: it is important to use the cheaper, bone-in type lamb roasts rather than, say, lamb loin. the bone-in roasts have triple the flavor and the higher fat content aids in achieving tenderness. also, be aware that the roasts labeled "lamb butt" are actually lamb shoulder--that's the roast that you want.

Seedy Granola

Ingredients

  • 8 cups oats
  • 1 cup unsweetened coconut
  • 1 cup almonds, chopped
  • 1 cup pecans, chopped
  • 1 cup sunflower seeds
  • 1/2 cup sesame seeds
  • 1/2 cup flax seed
  • 1 cup oat bran
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 1/2 cup maple syrup
  • 1 tablespoon vanilla

Recipe

  • 1 preheat oven to 300 degrees.
  • 2 chop nuts to desired size.
  • 3 mix all dry ingredients together in a large bowl.
  • 4 mix all wet ingredients together in a separate bowl.
  • 5 add wet ingredients to the dry ingredients and mix thoroughly.
  • 6 spread onto two large baking sheets.
  • 7 bake for 40 minutes, stirring every 10 minutes and rotating the pan positions for even toasting.
  • 8 cool, then store in an airtight container.

  • 2 cups dates, chopped

  • 2 cups nuts, chopped

  • 1 cup candied cherry, chopped

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 2 cups sugar

  • 2 eggs, beaten separately (whites separate from yolks)

  • 4 cups all-purpose flour, sift before measuring

  • 1/2 cup butter, softened

  • 1 teaspoon allspice

  • 1/2 teaspoon nutmeg

  • 1 teaspoon cinnamon

  • 1 preheat oven to 350 degrees.

  • 2 sift flour and baking powder together.

  • 3 in a separate bowl, cream butter and sugar.

  • 4 put dates in a large mixing bowl and stir baking soda into them.

  • 5 pour 2 cups boiling water over dates.

  • 6 add butter and sugar mixture and stir well.

  • 7 add egg yolks and stir.

  • 8 coat nuts with some of the flour and then add them to the mixture.

  • 9 add the flour and spices and mix well.

  • 10 last add the egg whites and stir. (note: you do not have to beat the egg whites to a stiff peak before adding; just beat them until blended).

  • 11 bake in a greased loaf or tube pan (angel food pan) for 60 minutes or until toothpick inserted into the middle comes out clean. if you use a standard loaf pan, this will make two loaves.

Quiche Maraichere (french Vegetable Tart)

Ingredients

  • Servings: 6
  • 1 tablespoon butter
  • 2 stalks celery, peeled, trimmed and cut into small dice
  • 2 slender leeks, and light green parts only, trimmed, quartered lengthwise and finely sliced
  • 2 slender carrots, peeled, trimmed and finely diced
  • 1 medium red pepper, trimmed, seeded and finely diced
  • 2/3 cup heavy cream (depending on height of crust, see above)
  • 1 large egg
  • 1 large egg yolk
  • 2/3 cup grated cheese, such as gruyere, parmesan or cheddar
  • salt & freshly ground black pepper
  • partially baked tart shell, still in its pan. (you can also use a storebought crust)

Recipe

  • 1 put a skillet over medium-low heat, add the butter and, when it's melted, toss in the vegetables. cook, stirring, for about 10 minutes, or until the vegetables are tender. season with salt and pepper, then scrape the vegetables into a bowl and let them cool while you preheat the oven.
  • 2 when you're ready to bake the quiche, center a rack in the oven and preheat the oven to 400°f.
  • 3 put the partially-baked crust on a lined baking sheet.
  • 4 spoon the vegetables into the tart shell and spread them evenly along the base of the crust - the vegetables will just about fill the crust. whisk the cream, egg and egg yolk together, season with salt and pepper and carefully pour the custard mixture over the vegetables. depending on how your crust baked, you may have too much custard - don't push it. pour in as much custard as you can without overflowing the sides of the crust, wait a few minutes until it's settled into the vegetable's nooks and crannies then, if you think it will take it, pour in a little more. very carefully slide the baking sheet into the oven. (if it's easier for you, put the quiche into the oven without the custard, then pour in the cream.).
  • 5 bake the quiche for 20 minutes, sprinkle the cheese over the top and bake for another 10 to 15 minutes, or until the cheese is golden and, most important, the quiche is set and uniformly puffed (wait for the center to puff). transfer the quiche to a rack and cool until it's only just warm or until it reaches room temperature before serving.

Southern Made Cream Corn

  • 12 fresh ears of corn

Recipe

  • 1 pull shucks and silk off corn and wash thoroughly.
  • 2 take 4 of them and cut kernels off.
  • 3 take remaining corn and leave on cob, grate on a grater into a bowl.
  • 4 pour kernels and creamed corn together in a frying pan and add 3-4 tbsp butter or margarine.
  • 5 heat on med until corn is tender (about 15 minutes).
  • 6 if corn is drying up in pan, add a little more butter.

  • 3/4 lb barilla penne pasta

  • 2 tablespoons butter

  • 2 boneless skinless chicken breast halves, sliced 1/2-inch thick

  • 3 garlic cloves, minced

  • 1 bunch green onion, chopped

  • 2 tablespoons cajun seasoning

  • 1 teaspoon fresh ground black pepper

  • 1 teaspoon ground cayenne pepper

  • 8 ounces heavy cream

  • 1 green bell pepper, julienne

  • 1 red bell pepper, julienne

  • 8 ounces fresh mushrooms, quartered

  • 3/4 cup parmigiano-reggiano cheese, grated


Recipe



  • 1 cook barilla penne pasta according to package directions.

  • 2 drain; set aside.

  • 3 meanwhile, melt butter in a large skillet over medium-high heat.

  • 4 add chicken; cook, stirring frequently, until browned, about 6 to 8 minutes.

  • 5 add garlic, onions, cajun seasoning and ground black and cayenne peppers.

  • 6 add bell peppers and mushrooms; stir to combine.

  • 7 cover and cook for 5 minutes.

  • 8 uncover; stir in cream and let simmer another 2-3 minutes.

  • 9 stir in parmesan cheese.

  • 10 remove sauce from heat, stir in cooked pasta and serve immediately.

Spicy Deep Fried Gator Balls

  • 1 red bell pepper, diced

  • 1 onion, diced

  • 4 roll balls in cornmeal until coated.

Cough Lozenges

Ingredients

  • Servings: 12
  • 3 teaspoons mixed herbs (use 3 different herb combinations such as thyme, sage, fennel seeds, colts foot, hyssop etc.)
  • 3 cups water (boiling)
  • 1 cup honey (or maple syrup)

Recipe

  • 1 boil the 3 cups of water and put your herbs of choice into the hot water to infuse.
  • 2 strain though a sieve.
  • 3 add the one cup of honey or maple syrup and cook on a gently rolling simmer until mixture starts to thicken.
  • 4 pour it into a baking tray lined with oiled paper.
  • 5 when cool cut into squares.
  • 6 place in a bag with some granulated sugar and sake to coat to prevent sticking.
  • 7 store in a bag.

Quick And Easy Cornbread

  • 2 1/2 cups self-rising cornmeal

  • 1/2 cup all-purpose flour

  • 1 teaspoon salt

  • 1/4 cup sugar

  • 1/2 cup melted butter (1 stick blue bonnet works well)

  • 1 1/2 cups milk

  • 2 large eggs, lightly beaten

  • vegetable shortening

  • 1 preheat oven to 425.

  • 2 grease sides and bottom of a 13x9 glass pan with the shortening.

  • 3 mix the cornmeal, flour, salt and sugar together.

  • 4 mix in the butter, eggs, and milk just until it's well mixed. should be the consistency of grainy glue.

  • 5 pour into the pan and bake for 25 min (i have a small oven and my cook times may be a bit off -- check at 20 could take up to 30 depending on your oven).

  • 1 tablespoon olive oil
  • 1 garlic clove, crushed
  • 1/2 teaspoon dried crushed chili
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 lemon, juiced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 tablespoon sherry wine
  • 12 jumbo tiger shrimp, peeled and deveined
  • 6 bamboo skewers, soaked
  • salt and pepper

Recipe

  • 1 in a medium bowl, add oil, garlic, chili, cumin, paprika, lemon juice, parsley and sherry and mix to combine. add shrimp to marinade and toss to coat. cover and place in fridge for 30 minutes or up to 1 day.
  • 2 thread 2 shrimp onto each skewer and season wiht salt and pepper.
  • 3 heat barbecue to high, then place shrimp skewers on the grill and cook for 2-3 minutes per side.
  • 4 once fully cooked, remove shrimp skewers from heat and serve.

  • 1 package yeast


Recipe



  • 1 combine flour, water and yeast in a warm bowl.

  • 2 use a wooden or plastic spoon to stir mixture till smooth.

  • 3 cover the container with plastic wrap and place it in a warm, draft-free area for 36-48 hours; your starter should be slightly bubbly and give off a delicious sour, yeasty, aroma.

  • 4 its consistency will be that of light pancake batter.

  • 5 cover the sourdough container and put it to rest in the fridge.

  • 5 separate meat from bones, divide into bite-sized pieces, and set aside.

  • 6 discard bones.

  • 7 in a medium bowl, combine flour, water, salt and pepper for dumplings and mix well.

  • 8 dough should be well-defined, barely sticky, and easy to handle by hand: if it is too sticky, add more flour, or if it is crumbling, add more water.

  • 1 wash oranges with hot water, scrubbing well.
  • 2 grate 1 ts of zest from one orange; cut the peel of another orange into fine julienne strips.
  • 3 cook the orange julienne: measure sugar, water and orange strips into a saucepan and simmer until liquid has evaporated. arrange orange strips on baking parchment in swirls and allow to cool.
  • 4 juice one orange (you should get about 100 ml of juice). peel and slice the remaining five oranges and also remove all the pith and membranes surrounding the slices.
  • 5 now make the orange sauce: place egg yolks, orange juice, grated zest and sugar on top of a double boiler. heat gently and whip until the mixture is thick and pale yellow, and tiny bubbles form. remove from heat.
  • 6 add liqueur and vanilla sugar and keep whisking until the mixture has cooled down. keep sauce in the fridge until ready to serve.
  • 7 just before serving, whip whipping cream until stiff peaks form. fold whipped cream into orange sauce.

  • 1 melt 1 tablespoon butter in a small skillet.

  • 2 add zucchini, onion, and tomato; saute 2-3 minutes or just until tender.

  • 3 stir in salt and pepper to taste; set aside.

  • 4 combine eggs, water, remaining salt, basil, celery salt, and remaining pepper; mix well.

  • 1 bunch fresh basil, chopped

  • 1 saute the shallots in the olive oil.
  • 2 add the tomatoes, and lightly crushed garlic cloves as well as the stripped thyme leaves and chopped basil. season with salt and pepper. cover and simmer for 30 minutes.

  • 1 place lamb cubes in a large shallow container. combine the soy sauce, brown sugar, sherry, garlic powder, and cinnamon, stirring well. pour over the lamb. cover and marinate in the refrigerator at least 4 hours, stirring lamb occasionally.

  • 1 make the cake: preheat oven to 350°; grease and flour a 9-inch square or round cake pan.

  • 2 in a bowl, combine the flour, cinnamon, ginger, cloves, and salt; stir with a fork to mix well.

  • 3 in a big bowl, combine the vegetable oil, cane syrup, and egg; stir with a fork or whisk to combine well.

  • 4 add about 1/3 or the flour mixture to the syrup mixture and then stir gently, just until the flour disappears.

  • 5 add the baking soda to the hot water, and then stir about half the water into the batter.

  • 6 stir another 1/3 of the flour mixture, then the remaining water, and finally the remaining flour, stirring gently each time just to mix everything well.

  • 7 quickly pour the batter into the prepared pan, and bake for 30-35 minutes, until the cake springs back when touched gently in the center, and is beginning to pull away from the sides of the pan.

  • 8 make the frosting: in a bowl, beat the butter until light and fluffy; add in half the powdered sugar, the vanilla, and salt; beat with a mixer at medium speed until smooth.

  • 9 add the remaining powdered sugar and the cane syrup, and beat until smooth and creamy, stopping to scrape down the bowl and mix well.

  • 10 to complete: if cake is round, cool the cake in the pan on a rack, for 10 minutes, turn it out of the pan, and place it, top side up, on a wire rack to cool completely; place cooled cake on a serving plate or cake stand, top side down, and spread the frosting over it generously, covering the top and sides.

  • 11 if it is square, spread the icing over the cooled cake right in the pan, and cut into squares to serve; serve warm, right from the pan.

  • 6 stir so all ingredients are well combined.

  • 7 add the egg yolks and remove from the heat.

  • 8 pour mixture in a 9x9" baking dish.

  • 9 bake in the preheated 300 degree oven for 10 minutes.

  • 10 remove the dish from the oven and refrigerate for 2 hours or until completely cooled.

  • 11 heat oil in a deep fryer.

  • 12 form balls and roll in the additional flour.

  • 13 deep fry the cheese balls, a few at a time, until golden brown.

  • 14 remove from hot oil and drain.

Southern Pecan Pie Filling

  • 2 egg yolks
  • 1 cup granulated sugar
  • 4 tablespoons flour
  • 1 cup sour cream
  • 1/4 teaspoon lemon juice or 1/4 teaspoon extract

  • 2 egg whites
  • 1 cup brown sugar
  • 1 cup broken pecans

  • 1 mix all ingredients and cook in double boiler for 45 minutes, stirring every 10 minutes for the first 20 minutes, then stirring every 3-5 minutes,or until thickened.
  • 2 while mixture cools, prepare topping.
  • 3 for topping: beat egg whites until stiff.
  • 4 add brown sugar and mix well.
  • 5 stir in pecans.
  • 6 pour cooled filling into baked pie shell.
  • 7 cover with topping and bake in 325 degree oven until light brown or about 15 minutes.

Mama's Kings Ranch Chicken Casserole (southeast Texas Style)

  • 1 -10 oz.can condensed cream of mushroom soup

  • 1 -8 oz.can rotel tomatoes & chilies (undrained. you can also choose between hot or mild)

  • 1 add enough water to pot to cover chicken completely. boil chicken until it is completely done( normally takes about 45 minutes).

  • 2 preheat oven to 350.

  • 3 in a large mixing bowl combine the cream of chicken, cream of mushroom, rotel tomatoes and 1/2 to 3/4 a can of water. mix well.

  • 4 in a 9x13 pan layer the ingredients starting with the doritos, then the shredded chicken, cheese, and soup mixture on top. repeat layering the ingredients in the same order until you get to the top of the pan or run out of ingredients.

  • 5 place pan in the oven and bake for 20 minutes.
