Swiss Stuffed Mushrooms

Total Time: 40 mins Preparation Time: 25 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 12 large mushrooms
  • 2 -3 tablespoons butter, melted
  • salt and pepper
  • 2 tablespoons shallots, minced
  • 2 tablespoons butter
  • 1/2 tablespoon flour
  • 1/2 cup heavy cream
  • 3 tablespoons parsley, minced
  • 1/4 cup swiss cheese, grated
  • 1 -2 tablespoon butter, melted

Recipe

  • 1 preheat oven to 375.
  • 2 remove mushrooms stems and reserve.
  • 3 wash and dry caps.
  • 4 brush with melted butter, arrange hollow-side up in baking dish.
  • 5 season lightly with salt and pepper.
  • 6 chop stems, and squeeze in towel to remove as much juice as possible.
  • 7 saute with shallots in butter for 4-5 minutes.
  • 8 lower heat, add flour and stir for 1 minute.
  • 9 stir in cream and simmer until thickened.
  • 10 add parsley, salt and pepper.
  • 11 fill caps with mixture.
  • 12 top each with 1 tsp cheese and drizzle with melted butter.
  • 13 bake 15 minutes.
