Ingredients
- 1/4 cup butter
- 2 tablespoons flour, plus additional flour for rolling balls
- 1/2 cup hot milk
- 1/2 lb swiss cheese, grated
- salt and pepper
- nutmeg
- 2 egg yolks
- oil (for deep frying)
Recipe
- 1 preheat oven to 300 degrees.
- 2 in a sauce over medium heat, melt the butter.
- 3 stir in the 2 t flour.
- 4 add milk and stir to mix well.
- 5 add the swiss cheese and seasonings to taste.
- 6 stir so all ingredients are well combined.
- 7 add the egg yolks and remove from the heat.
- 8 pour mixture in a 9x9" baking dish.
- 9 bake in the preheated 300 degree oven for 10 minutes.
- 10 remove the dish from the oven and refrigerate for 2 hours or until completely cooled.
- 11 heat oil in a deep fryer.
- 12 form balls and roll in the additional flour.
- 13 deep fry the cheese balls, a few at a time, until golden brown.
- 14 remove from hot oil and drain.
