Kiwi Jam

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 5 unripe kiwi fruits
  • 1/2 cup water
  • 3/4 cup sugar
  • 1 teaspoon lime juice (any acid will work)

Recipe

  • 1 peel and dice kiwis, cutting out the core if you're short on time (or want something that's more of a jelly than a jam).
  • 2 putting the kiwis, water, sugar and lime juice in a large saucepan, set it on medium heat and bring to a simmer. let simmer on low under a lid for 30-45 minutes (if you left in the cores) or until soft (10-15 without cores).
  • 3 take off the lid and let reduce to thickened consistency (it'll be a bit of a jelly now).
  • 4 either put through a food processor, or very gently whisk until it's as smooth or lumpy as you want it (kiwi napalm burns, kids).
  • 5 put in a container and refrigerate (will keep up to 2 weeks), use on pancakes, toast, cake, anywhere you like.

  • 3 ounces lemon gelatin
  • 1 1/2 cups boiling water
  • 1 tablespoon grated lemon, rind of
  • 8 ounces whipped topping, thawed
  • 3 kiwi fruits, peeled

Recipe

  • 1 dissolve gelatin in boiling water.
  • 2 stir in grated lemon peel; chill until consistency of unbeaten egg white.
  • 3 fold in whipped topping; set aside.
  • 4 cut one kiwi fruit into 8 slices; chop remaining two.
  • 5 alternate layers of gelatin mixture and chopped kiwi fruit into 8 parfait glasses; chill 1 hour.
  • 6 garnish with sliced kiwi fruit.

Kiwi Berry Cocktail

  • 15 ml kiwi liqueur
  • 30 ml strawberry liqueur
  • 90 ml orange juice

Recipe

  • 1 blend with lots of ice, serve in glass.

Kiwi Lemonade Spritzer

  • 4 kiwi fruits, peeled
  • 1 (12 ounce) can frozen lemonade concentrate, thawed
  • 3 cups carbonated lemon-lime beverage, chilled

Recipe

  • 1 cut kiwi into chunks.
  • 2 process fruit chunks and lemonade concentrate in food processor until smooth.
  • 3 pour mixture through wire mesh strainer into a pitcher discarding solids.
  • 4 stir in lemon lime drink just before serving.
  • 5 enjoy! ;).

Kiwi Fruit Gelato

Ingredients

  • Servings: 4
  • 1 cup water
  • 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 4 kiwi, pared
  • 5 tablespoons lemon juice
  • 1/4 teaspoon lemon, rind of, grated

Recipe

  • 1 combine water, sugar and corn syrup in saucepan.
  • 2 cook and stir 2 minutes or until sugar is dissolved.
  • 3 puree kiwi in food processor or blender to equal 3/4 cup puree.
  • 4 add lemon juice, peel and sugar mix.
  • 5 pour into shallow metal pan and freeze for approximately 1 hour or until the mixture is firm, but not solid.
  • 6 when chilled, spoon into a chilled bowl and beat with an electric mixer until the mix is light and fluffy.
  • 7 return it to the freezer for approximately 2 hours or until firm enough to scoop.

Kiwi Frozen Yogurt Pie

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 6 tablespoons butter, butter
  • 1/2 cup shredded coconut, toasted
  • 3 kiwi fruits, peeled and sliced thin
  • 1/2 cup fresh strawberries, chopped
  • 4 cups strawberry frozen yogurt, slightly softened
  • 3 strawberries, cut in half
  • 1/4 cup miniature chocolate chip
  • toasted coconut (to garnish)

Recipe

  • 1 combine chocolate cookie crumbs, butter, and coconut. press into the bottom and up the sides of a 9-inch pie plate. freeze until firm.
  • 2 place a layer of kiwifruit over the bottom of the pie crust reserving 3 slices for garnish.
  • 3 top evenly with the chopped strawberries. spoon frozen yogurt over the top and mound slightly in the center. freeze until firm.
  • 4 remove pie from freezer 10 minutes before serving. cut remaining kiwifruit slices in half. place kiwi and strawberry halves decoratively around the top of the pie. sprinkle with chocolate chips and toasted coconut.
  • 5 slice pie and serve immediately.

Kiwi Fruit Danish

Ingredients

  • 1 (3 ounce) package refrigerated crescent dinner rolls
  • 1 (3 ounce) package cream cheese, softened
  • 1 egg yolk
  • 2 tablespoons sugar
  • 1/2 teaspoon almond extract
  • 1/2 cup apricot jam
  • 3 kiwi fruits, pared and sliced

Recipe

  • 1 unroll crescent roll dough and shape into eight triangles.
  • 2 combine cream cheese, egg yolk, sugar, and almond extract; blend well. place 1 tablespoon of cream cheese mixture on the center of each triangle; top with kiwifruit slice. pull points of triangle to center and pinch to seal.
  • 3 bake on greased baking sheet at 375°f for 12 to 15 minutes or until golden brown. cool on rack.
  • 4 heat jam; top each danish with another kiwi slice and brush with melted jam.

  • 2 whole cardamom pods, crushed
  • 2 whole allspice
  • 1 cinnamon stick
  • 1/2 teaspoon vanilla extract

  • 4 kiwi fruits, peeled and cut crosswise into 1/3-inch-thick slices

Recipe

  • 1 combine 3/4 cup water, sugar, cardamom, allspice and cinnamon in saucepan. stir over medium-high heat until sugar dissolves, about 5 minutes.
  • 2 bring to a boil. reduce heat to low, and cook until liquid is syrupy and slightly reduced, about 8 minutes. remove from heat. stir in vanilla.
  • 3 put orange and kiwi slices in shallow bowl. pour hot syrup over fruit.

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup unsalted butter (1/2 stick)
  • 2 cups raisins
  • 1 1/3 cups buttermilk
  • 1 egg
  • 1 teaspoon baking soda
  • 1 egg yolk

Recipe

  • 1 preheat oven to 375°f.
  • 2 grease a 2 quart casserole.
  • 3 into a mixing bowl, shift flour, sugar, salt and baking powder.
  • 4 cut in butter w/ pastry cutter (or 2 knives scissor fashion), until like course cornmeal.
  • 5 stir in raisins.
  • 6 in separate bowl combine buttermilk, egg and baking soda.

  • Servings: 12
  • 1 (18 ounce) package moist deluxe white cake mix (such as duncan hines moist deluxe classic white cake mix)
  • 1/3 cup diet lemon-lime soda (such as diet 7-up or sprite)
  • 1/3 cup vegetable oil
  • 4 large egg whites
  • 1 cup sour cream

Recipe

  • 1 set oven to 350 degrees f (set oven rack to second-lowest position).
  • 2 mix all ingredients in a bowl on low speed until blended (about 30 seconds).
  • 3 beat at medium speed for 2 minutes more.
  • 4 pour the batter into a greased 13 x 9-inch baking pan (the batter will be quite thick so you will need to spread out with back of a spoon).

  • 1 melt the dark chocolate and spread over baking paper in slice tray. cool completely until chocolate has hardened.

Kittencal's Vegetable Platter With Blue Cheese Dip

Ingredients

  • Servings: 8
  • 1 cup sour cream
  • 1/2 cup hellmann's mayonnaise (do not use salad dressing)
  • 3 tablespoons finely crumbled blue cheese (can use more for a stronger taste)
  • 1 tablespoon minced yellow onion
  • 1 teaspoon minced fresh garlic
  • 1 tablespoon dry ranch dressing mix
  • 1/4 teaspoon dried dill weed
  • 2 teaspoons worcestershire sauce
  • 2 tablespoons buttermilk
  • tabasco sauce, to taste (optional)
  • carrot (peeled and sliced into sticks)
  • celery (cut ribs into 3-inch long sections)

Recipe

  • 1 for the dip; in a food processor combine all ingredients except tabasco, buttermilk and veggies until smooth (adjusting the processing time for a smooth or semi-chunky texture).
  • 2 add in buttermilk, start with 1 tablespoon adding in more until desired consistency is achieved.
  • 3 add in tabasco to taste and adjust ingredients to taste if desired.
  • 4 place the dip in a round glass serving bowl; cover and refrigerate for minimum 3 hours.
  • 5 to assemble; place 1 to 2 lettuce leaves in the center of a extra large serving platter, then place the dip bowl the leaves.
  • 6 arrange each veggie around the edges of an extra large round serving platter, place bread sticks in between each pile of veggies to separate.

Kiwi & Lime Jam

Ingredients

  • 5 ripe kiwi fruits, peeled & chopped
  • 1/2 cup sugar
  • 1/4 lime, juiced
  • 1/8 teaspoon lime zest

Recipe

  • 1 peel the kiwi fruit, cut into quarters and then chop roughly.
  • 2 in a medium saucepan, heat the kiwi fruit and sugar over a low heat.
  • 3 simmer gently until the sugar dissolves stirring occasionally. add the lime juice and zest.
  • 4 once the sugar has dissolved turn the heat up and bring the mixture to a rapid boil for about 10 minutes. stir frequently and be sure not to let the mixture burn.
  • 5 spoon jam into a sterilized, air-tight jar and refrigerate. the jam can be kept up to a month.

  • 2 cups unsweetened apple juice
  • 1 tablespoon lemon juice
  • 4 kiwi fruits, peeled and sliced
  • artificial sweetener (equivalent to 6 teaspoons sugar)

Recipe

  • 1 in a blender, combine the first three ingredients; cover and process just until smooth.

  • 1 onion, finely chopped

  • 1/3 lb queso fresco, crumbled

Recipe

  • 1 in a saucepan, boil the pumpkin in water until soft. drain and mash.
  • 2 in a medium saucepan, heat the oil and saute the onion until golden.
  • 3 add milk, pumpkin, salt and sugar.
  • 4 gradually stir in cornmeal.
  • 5 cook about 10 minutes, stirring continuously.
  • 6 add cheese, remove from heat, and continue stirring until blended.

  • 1/2 cup cooked brown rice (can be substituted with white rice)
  • 1 (6 ounce) can tuna in vegetable oil (can be substituted with canned chicken)

Kiwi Muffins

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/3 cup sugar
  • 1/4 teaspoon cinnamon
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup oil
  • 2/3 cup chopped and peeled kiwi fruit

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 mix all dry ingredients in a large bowl.
  • 3 mix egg, milk and oil.
  • 4 add wet mixture to the dry mixture stirring just until moistened.
  • 5 add kiwis, stir just until blended.
  • 6 spoon batter into 12 lined muffin cups, filling 3/4 full.
  • 7 bake for 20 minutes.

  • 1 tablespoon honey
  • 8 ounces mineral water, chilled

  • 1 mix kiwifruit with cottage cheese; set aside.
  • 2 spread each tortilla with 1 tbsp of the peanut butter.
  • 3 divide fruit mixture evenly among tortillas.
  • 4 roll up and eat.

Kiwi Colada Freezer Jam

Ingredients

  • 9 very ripe peeled kiwi fruits
  • 1/2 cup dark
  • 3/4 cup unsweetened pineapple juice
  • 1 1/2 cups sugar
  • 2 teaspoons coconut flavoring
  • 2 tablespoons lemon juice
  • 1 packet of powered freezer jam pectin

Recipe

  • 1 mix sugar, , pineapple juice, lemon juice and coconut flavoring in a large bowl. stir until sugar is dissolved. you may want to warm this mixture slightly in microwave oven to help sugar dissolve.
  • 2 when above mixture is well blended add kiwi fruit and mash with a potato masher till fruit is a lumpy pulp.
  • 3 let mixture sit in bowl for 15 minutes.
  • 4 then add powered pectin according to package directions.
  • 5 pour finished jam into clean freezer containers leave 1/2 inch space at top.
  • 6 refrigerate or freeze.
  • 7 will keep for 1 year in freezer.

Kitty's Original 10 Bean Soup

Ingredients

  • Servings: 8
  • 1 (16 ounce) bag 15 bean soup mix or 1 (16 ounce) bag 10 bean soup mix, with seasoning included
  • 2 ham hocks
  • 1 (12 ounce) can
  • 2 cups chopped onions
  • 2 cups chopped celery
  • 2 -4 cloves garlic, chopped
  • 1 can mexican-style tomatoes
  • 1 can diced tomatoes and green chilies
  • 1 lb hot polish sausage
  • 1 lb raw boneless chicken breast

Recipe

  • 1 sort and rinse beans.
  • 2 combine beans, 7 cups water, , ham hocks, seasoning packet in large 6-8 quart pan.
  • 3 bring to boil and reduce to a rapid simmer.
  • 4 add chopped onions, celery, garlic and tomatoes to pan.
  • 5 simmer, covered, for at least 2 hours.
  • 6 remove ham meat, chop fine, and add rest of meat, cut into small chunks.
  • 7 simmer for 1 hours more until beans are soft.
  • 8 *mynotes: i did not use but about 4 cups of water, as we like it thicker.
  • 9 and i had to cook it a long time, to get the big beans tender.

Kitty's Baked Bbq And Bacon Beans For A Crowd

Ingredients

  • 3 (28 ounce) cans busch's maple cured bacon baked beans
  • 1 (28 ounce) can busch's country style baked beans
  • 2 (28 ounce) cans busch's barbecue baked beans
  • 2 (28 ounce) cans campbell's lamb and beans
  • 1 lb bacon, raw and chopped into 1/4-1/2 wide squares
  • 2 tablespoons dark brown sugar
  • 2 tablespoons molasses

Recipe

  • 1 pour all beans into a very large mixing bowl and combine.
  • 2 in a large roasting pan, layer the beans, sugar, molasses and bacon squares; starting with the beans on the bottom and end with bacon on the top.
  • 3 bake at 350 degrees, covered, for 1 1/2 hours; remove lid and bake for an additional 1/2 hour.

  • 1/2 lime, large cut into 4 pieces
  • 2 teaspoons sugar
  • 1/3 kiwi fruit, peeled and cut into 6 chunks
  • 2 ounces cachaca
  • 1 slice kiwi fruit

Recipe

  • 1 in cocktail shaker, combine the lime pieces and sugar and press with a muddler, to release the juice. add the kiwifruit and and press with muddler to crush. fill the shaker with ice. measure in the cachaca. cap and shake vigorously. pour into and old-fashioned glass. garnish with a slice of kiwifruit.

  • 2 gradually add cake mix.

  • 4 tablespoons flour
  • 2 cups half-and-half cream (or use 18% cream or full-fat milk)

Recipe

  • 1 for stovetop; melt butter in a heavy-bottomed saucepan over medium heat.
  • 2 add in flour stirring/whisking constantly for 1 minute.
  • 3 slowly add in cream or milk stirring/whisking constantly until bubbly and thickened.
  • 4 season with salt and pepper.
  • 5 for microwave; place butter into a 6 to 8-cup liquid pyrex measuring cup.
  • 6 microwave on high for 45 seconds or until thickened.

  • 1 put kiwifruit in a food processor with lime juice.

  • 5 freeze until solid.
  • 6 scoop up frozen mixture and put into a food processor or blender.

  • 1 peel the kiwis and mash them in a bowl until pureed. stir 2 tablespoons sugar into the fruit, cover, and refrigerate 1 hour.
  • 2 whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes. whisk in 1 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. pour in the cream and whisk to blend. stir in the kiwis.

  • oyster liquor
  • light cream or half-and-half
  • 2 tablespoons lemon juice

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 pick over and clean oysters, removing bits of shell. strain oyster liquor and set aside.
  • 3 melt butter in skillet; stir in tabasco. add onion and cook until tender but not brown. add bread crumbs and salt. toss lightly.
  • 4 cover bottom of shallow buttered baking dish with bread crumbs, then with a layer of oysters. repeat a layer of bread crumbs and oysters and end with a top layer of crumbs.

  • 1 in a dutch oven or or large pot cook the ground beef with onions and bell peppers over medium-high heat until the meat is no longer pink; drain the fat.

Recipe

  • 1 preheat oven to 350 f.
  • 2 in large bowl, mix the dump ingredients together.

  • 4 place on ungreased backing pan, do not let dumps touch.
  • 5 bake for 20 minutes (some may have to cook less time if smaller and some a few minutes longer if they are larger).
  • 6 while dumps are cooking, mix the litter ingredients in a sauce pan and bring to a boil.
  • 7 stir, then reduce heat to low, cover and simmer for 12-15 minutes.
  • 8 fluff rice with a fork and set pan aside.
  • 9 when dumps are done, transfer them paper towels to drain.
  • 10 serve by putting dumps into a litter box shaped pan and spooning rice mixture over the dumps, leaving some of the dumps exposed.

Recipe

  • 1 lb ground beef (made into you favorite meatball recipe)
  • 1 (16 ounce) package thin spaghetti
  • 3 tablespoons oil
  • 3 cups shredded mozzarella cheese, divided
  • 1 cup grated parmesan cheese
  • 3 large eggs, slightly beaten
  • 1 teaspoon salt (or to taste)
  • black pepper (to taste)
  • 2 (28 ounce) jars spaghetti sauce (or use your own favorite sauce)
  • parmesan cheese (optional)

Recipe

  • 1 grease a 13 x 9-inch baking dish.
  • 2 prepare your own favorite meatball recipe, then shape into about 1-1/2-inch balls.
  • 3 place the meatballs a greased baking sheet and bake until thoroughly cooked (about 22-25 minutes at 375 degrees) set the meatballs aside.
  • 4 boil the spaghetti in a large pot of boiling water until just al dente; drain then place into a large bowl.
  • 5 toss the spaghetti with 3 tablespoons oil; cool slightly, then add in eggs, 1-1/2 cups mozzeralla cheese, 1 cup parmesan cheese, salt and pepper; using clean hands toss until thoroughly combined (you can use a spoon but hands are better!).
  • 6 place the spaghetti into prepared baking dish, then press down slightly with hands.
  • 7 scatter the cooked meatballs over the spaghetti.
  • 8 top with spaghetti sauce over the top making certain to cover the pasta completely.
  • 9 cover with foil and bake 350 degrees for 45 minutes or until hot and bubbly.
  • 10 remove from oven then sprinkle about 1-1/2 cups mozzeralla cheese (or amount desired) over the top, then return to oven uncovered for 3-5 minutes or until the cheese has melted.

Kittencal's Rotisserie Prime Rib Roast

Ingredients

  • 1 (5 lb) bone-in prime rib roast (about 5 pounds)
  • olive oil or vegetable oil
  • 6 garlic cloves, halved (or use as much as desired or you may omit completely)
  • 2 teaspoons garlic powder (can use more)
  • 1 1/2 tablespoons mccormick's montreal brand steak seasoning

Recipe

  • 1 cut small slits all over the roast then insert a half a clove of garlic into each slit.
  • 2 rub olive oil all over the roast.
  • 3 in a small bowl combine the garlic powder with the montreal steak seasoning, then rub all over the roast using clean hands (at this point you may cover with plastic wrap and refrigerate overnight if desired).
  • 4 place a plate and allow the meat to come down to almost room temperature.
  • 5 since the roast tends to shrink and will fall apart easily make certain to tie up the roast securely using cotton butcher's twine.
  • 6 starting at the meaty end of the roast load the rod and clamp down to secure (keeping the roast evenly distrubuted on the rod).
  • 7 set grill to medium heat.
  • 8 prepare a gas or charcoal grill for spit-roasting over indirect heat (or according to instructions for your grill).
  • 9 pour about 1-inch water or into a drip pan then set under the center of the spit.
  • 10 attach the spit to the rotisserie mechanism, then cover the grill.
  • 11 roast until an instant-read meat thermometer inserted about 3-inches deep into the center of the roast away and not touching the bone reads reaches about 130 to 135 degrees f. for medium rare (be aware that the internal temperature will rise at least 5 degrees (to about 135-140 or more) after removing from the grill, for the best results start checking the temperature after about 1-1/4 hours and once it reads 110 degrees f or so, keep checking it often for the perfect doneness).
  • 12 carefully remove the meat from the rod.
  • 13 place on a carving board and cover with foil (do not poke or slice or you will loose a lot of juice from the roast!).

  • 2 cups shredded romaine lettuce

  • 1 -2 tablespoon minced fresh garlic (or use 1 teaspoon garlic powder)

  • 1/2 of a package dry onion soup mix (can use the whole 2-ounce package)
  • 2 tablespoons worcestershire sauce
  • 1/4 cup milk
  • 1/2 cup dry breadcrumbs (more if needed to hold the mixture together)
  • 1/2 teaspoon fresh ground black pepper (optional)
  • 1 medium onion, chopped
  • 1 -2 tablespoon fresh minced garlic (optional, i like to add it in)
  • 1 (10 ounce) can sliced mushrooms, drained

  • 1 teaspoon ground black pepper (or to taste)
  • 1/4 cup 18% table cream (to thin if necessary)

Recipe

  • 1 in a bowl mix together all ingredients for the burgers.
  • 2 shape into desired size patties.
  • 3 heat 1-2 tablespoons butter in a large heavy skillet over medium-high heat.
  • 4 brown the burgers for about 4-5 minutes on each side (the burger will be browned on the outside they do not have to be fully cooked as they will cook more in the gravy; remove to a plate.
  • 5 add in onion and saute for about 3 minutes scraping up the browned bits with a wooden spoon while stirring.
  • 6 add in fresh garlic and canned mushrooms; cook stirring for 1-2 minutes.
  • 7 in a medium bowl, mix together cream of mushroom soup, 1/2 package dry onion soup mix, grated parmesan cheese, worcestershire sauce and black pepper; mix well to combine then add to the skillet and bring to a simmer over medium heat stirring.
  • 8 reduce heat to low and stir in the cream to thin out the gravy (if you prefer a very thick gravy omit the cream).
  • 9 place the burgers back then turn to coat with a spoon to coat the burgers with the soup mixture.
  • 10 simmer uncovered on low heat for 1 hour or even longer (i have simmered this for 2 hours on low heat, stirring occasionally, turning the burgers over a few time during cooking).
  • 11 serve with or over fries or mashed potatoes.

Kitty's Chicken And Dumplings

  • 2 cups half-and-half
  • 5 cups water
  • 1/2 cup celery, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 4 chicken bouillon cubes
  • 1/2 cup margarine
  • 3 chicken breasts
  • 2 tablespoons garlic
  • 3 tablespoons flour
  • 1 cup sharp cheddar cheese, shredded
  • 4 (7 1/2 ounce) cans biscuits

Recipe

  • 1 put the first seven ingredients in a large pot and set to boil. once boiling, turn down to simmer.
  • 2 while the pot is heating up, dice chicken and saute with garlic.
  • 3 when the chicken is done, add to the large pot. then add the rest of the ingredients.
  • 4 tear the biscuits into bite sized peices and add them to the pot.
  • 5 put a lid over it and let it simmer for another 15 minutes.

Kittencal's Slow Cooker Eye Of Round Roast With Gravy

  • 1 (10 ounce) can cream of mushroom soup, undiluted
  • 1 (10 ounce) can low sodium beef broth
  • 1 (1 ounce) package dry onion soup mix (i use the onion-mushroom flavor)
  • 1 -2 tablespoon fresh minced garlic
  • 1 tablespoon worcestershire sauce
  • 1 (3 -4 lb) eye of round roast
  • 1/4 cup flour
  • 1 teaspoon black pepper
  • 1/2-1 teaspoon garlic powder (optional)
  • 3 -4 tablespoons oil

Recipe

  • 1 in a bowl combine the mushroom soup with beef broth, dry onion soup mix, fresh garlic and worcestershire sauce; mix until combined, then transfer into a 5-6-quart crock pot.
  • 2 in a small bowl mix together flour with black pepper and garlic powder (if using).
  • 3 dredge the roast in the flour/black pepper mixture.
  • 4 heat oil in a skillet over medium heat; add in the roast and lightly brown on all sides.
  • 5 transfer the roast to the slow cooker and generously spoon the broth mixture on top of the roast.
  • 6 cover and cook on low for 8 hours or until the roast is tender.
  • 7 for a thicker gravy, after cooking remove gravy to saucepan and thicken with water/ cornstarch mixture.

Kittencal's Strawberry Spinach Salad

  • 3 tablespoons sugar (or more to taste)
  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar (can use white balsamic is better)
  • 1/4 teaspoon paprika
  • 1/4 teaspoon worcestershire sauce
  • 1/4-1/2 teaspoon fresh ground black pepper
  • 2 tablespoons poppy seeds (can use more)
  • 1 pint fresh strawberries, sliced (washed then thoroughly dried before slicing)
  • 1 lb fresh baby spinach leaves, trimmed (can use less)
  • 1 small red onion, sliced
  • 1/4 cup bacon bits
  • 1/3-1/2 cup crumbled feta cheese
  • 1/3 cup candied walnuts

Recipe

  • 1 for dressing; in a bowl or in a food processor mix together sugar, olive oil, balsamic vinegar, paprika, worcestershire sauce and 1/4 teaspoon black pepper; whisk or process until well combined; start with 3 tablespoons of sugar and add in more after if desired, mix in poppy seeds and season with more black pepper if needed, refrigerate for 2 or more hours.
  • 2 for the salad; combine all salad ingredients in a large bowl; pour the dressing over and chill for 10-15 minutes before serving.

Kittencal's Sub/sandwich Buns

Ingredients

  • 3/4 cup warm water
  • 1 teaspoon sugar
  • 2 tablespoons dry yeast (use 2 tablespoons yeast, even 1-3/4 tbsp will do fine)
  • 1/4 cup crisco shortening, melted
  • 1 cup full-fat milk
  • 1 1/2 teaspoons salt (can reduce to 1 teaspoon)
  • 3 tablespoons sugar
  • 4 cups all-purpose flour (more as needed)

Recipe

  • 1 prepare a heavy-duty stand mixer fitted with a kneader attachment.
  • 2 place about 3-1/2 cups flour in the bowl.
  • 3 melt the shortening in the microwave; add to the bowl with the flour.
  • 4 in a measuring cup, measure out 1 cup milk, then add in 4 tablespoons sugar and the salt; heat until quite warm in the microwave, stirring to dissolve the sugar and salt.
  • 5 pour the milk into the bowl with the melted shortening and flour; cover the bowl with a towel to keep ingredients warm.
  • 6 proof the yeast in a 3/4 cup warm water with 1 teaspoon sugar for about 8-10 minutes or until foamy.
  • 7 after proofing, add to the bowl and start kneading for about 3-4 minutes, then add in more flour as needed to create a soft semi-sticky dough, knead about 8 more minutes until smooth.
  • 8 place the dough on a very lightly floured counter or board; let rest for 5-10 minutes, covered with a clean tea towel.
  • 9 grease a large bowl, then place the dough into bowl to rise in a warm place for about 50-60 minutes (because of the amount of yeast, the dough should take a shorter rising time in a warm place).
  • 10 punch down dough.
  • 11 cut into pieces (i usually cut into 6 pieces), and shape large balls.
  • 12 let dough balls rest for about 4 minutes (or just enough time to make shaping easier).
  • 13 shape the dough into desired length for buns.
  • 14 sprinkle a large cookie/baking sheet with cornmeal, or lightly grease with cooking spray.
  • 15 place the long pieces of dough on a baking sheet (shape once again if you need to).
  • 16 cover and let rise for about 25 minutes, or until doubled.
  • 17 set oven to 375 degrees.
  • 18 bake for about 22-25 minutes, or until dark golden brown.
  • 19 if desired after the second rising and just before baking, beat one egg white with 1 teaspoon cold water, then brush on buns and sprinkle with sesame seeds.

Kittencal's Sweet Cooked Corn Removed From The Cob

  • 10 -12 ears fresh corn, husks and silks removed
  • 1 1/4 cups water
  • 1/4 cup milk
  • 1/4 cup sugar (can use less)
  • butter (use as much as desired)

Recipe

  • 1 using a sharp knife holding the cob tightly with one hand over a flat surface slice the corn from the cob leaving about 1/3 of the kernels still attached on the cob; transfer to a pot.
  • 2 then holding the cob over a large pot scrape off all of the juice "milk" and remaining kernels of the corn into the pot.
  • 3 stir in water, milk and sugar; bring to a boil over medium heat (watch that the water does not boil over) cook for 10 minutes stirring frequently.
  • 4 drain off about half the liquid then transfer to a large bowl.
  • 5 stir in butter until melted then season with salt and enjoy!

Kittencal's Turkey-potato Casserole With Almond Crescent Crust

  • 2 -3 medium potatoes, peeled, cooked and cubed
  • 2 cups frozen peas and carrots (thawed under warm water)
  • 1/2 cup butter
  • 1 medium onion, finely chopped
  • 1 -2 tablespoon fresh minced garlic
  • 2 -3 teaspoons dried thyme
  • 1 pinch cayenne pepper
  • 1/3 cup flour, plus
  • 3 tablespoons flour
  • 1 1/2 cups chicken broth or 1 1/2 cups turkey broth
  • 1 1/2 cups half-and-half cream (or use full-fat milk)
  • 1/4 cup whipping cream, unwhipped
  • 2 tablespoons chicken bouillon powder (i just use 3 small packages oxo bouillon powder)
  • 1/3 cup grated parmesan cheese
  • 2 cups grated old cheddar cheese
  • 1 (2 ounce) jar pimiento strips (drained and chopped)
  • 4 cups diced cooked turkey or 4 cups cooked chicken
  • 2 teaspoons seasoning salt (to taste) or 2 teaspoons white salt (to taste)

  • 2 (8 ounce) packages refrigerated crescent dinner rolls
  • 1 1/2 cups grated old cheddar cheese (can use more)
  • 2/3 cup slivered almonds
  • 3 tablespoons melted butter

Recipe

  • 1 set oven to 350 degrees.
  • 2 butter a 13 x 9 or an 11 x 7-inch-inch baking dish, or an oval or round casserole dish.
  • 3 heat butter in a large saucepan over medium heat; add in onion, garlic, dryed thyme and cayenne pepper; saute for about 4 minutes or until veggies are soft.
  • 4 add in 1/3 cup plus 3 tablespoons flour and whisk for 1 minute.
  • 5 add in broth, half and half cream, whipping cream, bouillon powder, parmesan cheese and pimientos; stir until combined, smooth and thickened.
  • 6 add in cooked turkey or chicken; bring to a boil and simmer over low heat for about 20 minutes.
  • 7 season with seasoned salt and black pepper, then add in cooked cubed potatoes and thawed peas and carrots; cook until just heated through.
  • 8 add in cheddar cheese and stir until the cheese is melted.
  • 9 transfer to prepared casserole dish.
  • 10 for the crust; unroll two packages of crescent rolls, pinch the perforations to seal to make 2 large rectangles.
  • 11 spread both rectangles on top of the hot turkey mixture, pinching edges to seal against the baking dish (does not have to seal tightly, you might have some dough left over from the two rectangles).
  • 12 using a fork prick some holes in the crust to allow steam to escape.
  • 13 in a small bowl mix together 1-1/2 cups grated cheddar with sliced almonds, then sprinkle over the crescent roll crust.
  • 14 drizzle with melted butter on top.
  • 15 bake for about 20-25 minutes or until bubbly and the crust is golden.
  • 16 let sit for about 20 minutes or more before slicing.

Kiwi Banana Shake

Kittencal's Tuna Salad Sandwiches

  • 2 (7 ounce) cans solid white tuna (squeeze out excess moisture with hands)
  • 1 green onion, finely chopped
  • 1 small celery rib, finely diced
  • 2 -3 tablespoons fresh lemon juice
  • 1/3 cup low-fat mayonnaise (can use full-fat mayonnaise)
  • 3 tablespoons sweet pickle relish (optional or to taste)
  • 1/2 teaspoon lemon pepper (can use fresh ground black pepper)
  • seasoning salt (to taste or use white salt)
  • 1/4 teaspoon mustard powder (optional)
  • 2 -3 drops tabasco sauce (optional)
  • 4 -6 slices bread

Recipe

  • 1 drain the tuna then hand-squeeze out any excess moisture; place in a bowl then flake with a fork.
  • 2 add in all remaining ingredients up to the tabasco sauce; mix until well combined, adjusting all seasonings to suit taste.
  • 3 cover with plastic wrap and chill for at least 2 hours (more is even better!).
  • 4 divide bread slices with lettuce leaves and slices tomatoes.
  • 5 delicious!

Kitty's Orange Cake

  • 18 ounces yellow cake mix
  • 3 ounces orange jell-o
  • 1 cup orange juice
  • 1 teaspoon orange extract
  • 1/2 cup vegetable oil
  • 1 teaspoon orange zest, i don't use this (optional)
  • 4 large eggs
  • 1 cup min chocolate chips
  • 2 tablespoons butter, chilled
  • 1 cup semisweet chocolate morsel
  • 1 teaspoon orange extract
  • 2 tablespoons orange juice

Recipe

  • 1 grease and flour bundt pan. i use bakers joy spray.
  • 2 dump the cake mix in a large mixing bowl.
  • 3 mix in orange jell-o powder.
  • 4 add the orange juice, orange extract, oil and orange zest.
  • 5 mix all ingredients together until they are well blended.
  • 6 add eggs one at a time, mixing after each addition.
  • 7 beat for 2 minutes on medium speed with electric mixer.
  • 8 fold in mini chips by hand.
  • 9 pour cake batter into pan.
  • 10 bake cake for 45-55 minutes or until side of cake separates from side of pan.
  • 11 cool on a rack for 20-25 minutes.
  • 12 loosen the outside edges and middle edges of cake and turn cake rack.
  • 13 let cake cool completely on rack.
  • 14 frostng:.
  • 15 put butter in bottom of a 2 cup microwave safe bowl.
  • 16 add the semi sweet morsels.
  • 17 heat on high for 1 minute.
  • 18 stir to make sure morsels are melted;repeat at 15 second intervals until they are melted.
  • 19 add the orange extract and stir in: add the orange juice one teaspoon at a time, stir after each addition.
  • 20 pour frosting over the ridge of the cake, letting it run down the sides of the cake.

  • 1 (10 ounce) package frozen chopped spinach (cooked according to package directions then hand-squeezed dry)
  • 6 tablespoons butter, cut into cubes (no subsitutes)

Recipe

  • 1 set oven to 350 degrees f.
  • 2 generously grease a 13 x 9-inch baking dish with cooking spray.
  • 3 in a large bowl whisk the eggs until frothy.
  • 4 add in milk, flour, garlic powder salt, pepper, cayenne, baking powder and 1/3 cup parmesan cheese whisking vigorously until well blended (can use an electric mixer if desired).
  • 5 using a spoon mix in spinach until blended, then mix in the chopped onion and shredded cheddar cheese.
  • 6 place the butter in the baking pan then place in the oven to melt (about 10-12 minutes).
  • 7 transfer/spread the mixture into the hot baking pan over the butter.
  • 8 sprinkle the top with 1/3 cup or more parmesan cheese.
  • 9 bake for about 30-35 minutes or until firm and golden brown (for a more crispy square bake longer).

Kittencal's Taco Seasoning Mix

  • 2 tablespoons mild chili powder (for the best flavor do not reduce this amount)
  • 1/2-1 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano

  • 2 -3 teaspoons cumin
  • 1 teaspoon seasoning salt (or use 1/2 teaspoon white salt)
  • 1 teaspoon black pepper
  • 1 pinch cayenne pepper (optional or to taste)

  • 1 combine all ingredients (double or triple if desired) .
  • 2 store tighty sealed in a small glass jar until ready to use (i store mine and all spices in the refrigerator).
  • 3 **note** this is only optional, if using the mix for tacos you might want to add in some flour into the seasoned cooked ground beef to thicken, i also add in about 1-1/2 cups tomato sauce and simmer, stirring for 20 minutes over low heat.

Kiwi & Nectarine Jam

  • 6 nectarines, peeled, pip removed & mashed
  • 1/8 cup fresh lemon juice
  • 1/2 cup pineapple juice, approx (just under 1/2 cup)
  • 1 apple, unpeeled & halved
  • 2 cups white sugar

Recipe

  • 1 in a large saucepan, combine kiwi & nectarines, pineapple juice, lemon juice and apple.
  • 2 bring to a boil and then add the sugar; stir to dissolve.
  • 3 reduce heat and simmer for 30 minutes. remove apples, pour into hot, sterilized jars and seal.

Kittencal's Tender And Juicy Breaded Dijon Chicken Breast

  • 6 large boneless skinless chicken breasts
  • 2 large eggs
  • 2 tablespoons dijon mustard
  • 1 1/2 cups dry breadcrumbs
  • 1 teaspoon garlic powder (if you are a garlic lover add in 1/2 teaspoon more)
  • 1 teaspoon seasoning salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon paprika
  • 1 pinch cayenne pepper (optional)
  • oil (for frying, use as needed)

Recipe

  • 1 prepare an ungreased baking sheet/pan.
  • 2 pat the breasts dry using paper towels.
  • 3 in a shallow dish whisk the eggs with dijon mustard until well blended.
  • 4 in another shallow dish (i use my 8x8-inch baking pan for this) combine the dry bread crumbs with the garlic powder, seasoned salt, black pepper, paprika and cayenne pepper.
  • 5 have 1 or 2 plates ready to put the breasts on after breading i just use the ungreasd baking sheet.
  • 6 dip one chicken breast into the egg/mustard mixture allowing any excess to drip off, then place the breast into the breadcrumb mixture turning to coat with the crumbs and pressing down with hands firmly to adhear the coating to the chicken; place a plate (or the prepared baking sheet).
  • 7 continue with remaining chicken.
  • 8 cover the bottom of the skillet with oil then heat over medium-high heat.
  • 9 add in the breaded chicken breasts one or two at a time and brown both sides (about 3 minutes per side or until golden brown, do not cook thoroughly).
  • 10 transfer to ungreased baking sheet.
  • 11 at this point you may leave the chicken in the pan until ready to bake.
  • 12 set oven to 400 degrees f.
  • 13 bake the browned chicken for 30 minutes or until cooked through.

  • 1 loaf french bread
  • 1/2 cup butter
  • 3 garlic cloves, crushed
  • 8 slices bacon, fried
  • flour
  • 12 large oysters, more if small
  • 8 slices fresh tomatoes

  • horseradish

Recipe

  • 1 cut loaf in half then hollow out and save top.
  • 2 melt the butter and add the garlic. brush the insides of the loaf with the mix. place in the fried bacon.
  • 3 flour the oysters and fry very quickly. then place in bread on top of the bacon.
  • 4 sear tomato slices and place on top of oysters. place top of bread on.
  • 5 wrap in foil and cook 10 minutes at 350f.
  • 6 serve hot, sliced with mayo and drizzle the horseradish on.
