Kittencal's Scotch Shortbread Bars

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup butter, softened (no substitutions)
  • 1/2 cup icing sugar (confectioners)
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • additional icing sugar, for dusting

Recipe

  • 1 set oven to 350 degrees f.
  • 2 prepare an ungreased 11 x 7-inch baking pan.
  • 3 in a mixing bowl cream butter and sugar well.
  • 4 combine flour, baking powder and salt; gradually add to creamed mixture.
  • 5 spread into a prepared ungreased baking pan.
  • 6 prick well several times with a fork.
  • 7 bake for 20-22 minutes, or until the edges just begin to brown.
  • 8 remove from oven the dust with more icing sugar.
  • 9 cool on wire rack.
  • 10 cut into bars.
