Kittencal's Simple Spaghetti Squash (vegetarian)

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 2
  • 1 spaghetti squash
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt (or to taste)
  • fresh ground black pepper (to taste)
  • freshly grated parmesan cheese

Recipe

  • 1 set oven to 400 degrees f.
  • 2 slice the squash evenly in half lenghwise.
  • 3 drizzle the cut sides of the squash with about 1 tablespoon olive oil then season lightly with salt and pepper.
  • 4 place cut-side down on a parchment-lined baking sheet.
  • 5 bake for about 45 minutes to 1 hour or until the squash is tender when pierced with a fork.
  • 6 remove the squash from the oven and cool slightly (or cool enough to handle).
  • 7 shred the inside of the squash with a fork into a bowl (the shreds will resemble spaghetti).
  • 8 drizzle melted butter.
  • 9 season with more salt and black pepper if desired , then sprinkle with grated parmesan cheese on top.
  • 10 delicious!
