Kitty's Potato Fritters #5fix

Total Time: 33 mins Preparation Time: 15 mins Cook Time: 18 mins

Ingredients

  • 1 (20 ounce) bag simply potatoes® shredded hash browns
  • 2 eggs
  • 2 limes
  • 1 1/2 cups parmigiano-reggiano cheese
  • 1 fresno chile pepper

Recipe

  • 1 beat the two eggs in a large mixing bowl.
  • 2 zest one lime into the egg with a fine rasp type grater.
  • 3 grate 1 and 1/2 cups of parmigiano reggiano with that same rasp type grater and add to egg mixture.
  • 4 use a a truffle slicer or hand mandolin slicer to cut the fresno chili into thin rings.
  • 5 use a sharp knife to cut each ring of chili into thin strips and add them to the egg mixture.
  • 6 fold the egg mixture to blend added ingredients and then fold in the bag of of simply potatoes shredded hash browns.
  • 7 form flat discs/ pancake like 1/2 cup portions with your hands.
  • 8 pan fry each fritter in canola oil for about 8 minutes on each side in a non-stick saute pan on a medium to medium high flame.
  • 9 when they are golden brown-- remove to a paper towel to drain.
  • 10 serve at least two warm fritters per person.
  • 11 you can squeeze some fresh lime juice over them from you left over above or slice thin wedges of fresh lime and add them as garnish.
