Stuffed Zucchini With Sausage

- 4 zucchini, cut lengthwise and hollowed out. chop up the hollowed out portion
- 1/2 lb italian sausage
- 1/2 cup romano cheese
- 2 tablespoons pine nuts
- 2 tablespoons sun-dried tomatoes
- 1/2 teaspoon salt
Recipe
- 1 preheat oven to 425.
- 2 cook the sausage in a skillet over medium heat, breaking it into small pieces.
- 3 add the chopped zucchini and saute for a few minutes.
- 4 turn the heat off and add the cheese, pinenuts, and sundried tomatoes.
- 5 place the zucchini in a baking dish.
- 6 sprinkle the salt over the hollowed out zucchini and fill them with the filling.
- 7 bake at 425 for 20 minutes.
