French Fried Onions (gluten-free)

Ingredients
- 1 large onion
- 1 1/2 cups soymilk (or other non-dairy milk)
- 1 1/2 cups all-purpose flour (bob's red mill makes a gluten-free a-p flour)
- salt, to taste
- oil, for frying
Recipe
- 1 slice onions with a mandoline.
- 2 soak in milk for 8 minutes.
- 3 drain.
- 4 heat oil to 375 degrees over medium heat for 10 minutes.
- 5 toss onions with flour and salt and separate on parchment paper.
- 6 let sit while oil heats.
- 7 fry by spoonful until golden brown.
- 8 drain.
- 9 when cool, transfer to a super-airtight container.
