Yarithes Yiouvetsaki (roasted Prawns W. Fresh Tomatoes And Feta

Ingredients

  • Servings: 6
  • 12 large prawns, in their shells
  • 1/2 cup olive oil
  • 1 medium onion, finely sliced
  • salt
  • fresh ground black pepper
  • 1 lb fresh tomato, peeled, seeded and thinly sliced
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped fresh oregano
  • 1 cup dry wine
  • fresh feta cheese

Recipe

  • 1 preheat the oven to 400 degrees.
  • 2 rinse the prawns in cold water and drain.
  • 3 peel the prawns, leaving the head and tail intact, discarding the shells.
  • 4 season with salt and pepper.
  • 5 place the prawns in a large oven-proof baking dish.
  • 6 in a large sauté pan, heat the olive oil.
  • 7 add the onions.
  • 8 season with salt and pepper.
  • 9 sauté for 3-4 minutes , or until translucent.
  • 10 add the tomatoes, garlic, and herbs.
  • 11 sauté for 1 minute.
  • 12 add the wine and bring the liquid to a boil.
  • 13 reduce to a simmer and cook for 2 minutes.
  • 14 pour the mixture over the prawns.
  • 15 sprinkle the top with the cheese.
  • 16 place in the oven and roast for 8 minutes.
  • 17 remove from the oven and garnish with parsley.
