Ingredients

- 12 large prawns, in their shells
- 1/2 cup olive oil
- 1 medium onion, finely sliced
- salt
- fresh ground black pepper
- 1 lb fresh tomato, peeled, seeded and thinly sliced
- 1 tablespoon chopped garlic
- 1 tablespoon chopped fresh oregano
- 1 cup dry wine
- fresh feta cheese
Recipe
- 1 preheat the oven to 400 degrees.
- 2 rinse the prawns in cold water and drain.
- 3 peel the prawns, leaving the head and tail intact, discarding the shells.
- 4 season with salt and pepper.
- 5 place the prawns in a large oven-proof baking dish.
- 6 in a large sauté pan, heat the olive oil.
- 7 add the onions.
- 8 season with salt and pepper.
- 9 sauté for 3-4 minutes , or until translucent.
- 10 add the tomatoes, garlic, and herbs.
- 11 sauté for 1 minute.
- 12 add the wine and bring the liquid to a boil.
- 13 reduce to a simmer and cook for 2 minutes.
- 14 pour the mixture over the prawns.
- 15 sprinkle the top with the cheese.
- 16 place in the oven and roast for 8 minutes.
- 17 remove from the oven and garnish with parsley.
