Tart Apricot And Pineapple Jam

Ingredients
- 4 cups dried apricots
- 5 cups pineapple, crushed
- 1 cup pineapple juice (obtained from crushing)
- 1 lemon, thinly sliced and chopped (including rind)
Recipe
- 1 simmer apricots in enough water to cover until they are soft enough to be mashed.
- 2 add pineapple and lemon. simmer, stirring frequently, until the mixture.
- 3 is thick and the pineapple chunks are clear. add juice while simmering.
- 4 pour into prepared jars leaving a 1/4" headspace. process in a boiling water bath for 10 minutes. adjust time according to your altitude.
- 5 makes: 10 half pints.
