Tart Apricot And Pineapple Jam

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 4 cups dried apricots
  • 5 cups pineapple, crushed
  • 1 cup pineapple juice (obtained from crushing)
  • 1 lemon, thinly sliced and chopped (including rind)

Recipe

  • 1 simmer apricots in enough water to cover until they are soft enough to be mashed.
  • 2 add pineapple and lemon. simmer, stirring frequently, until the mixture.
  • 3 is thick and the pineapple chunks are clear. add juice while simmering.
  • 4 pour into prepared jars leaving a 1/4" headspace. process in a boiling water bath for 10 minutes. adjust time according to your altitude.
  • 5 makes: 10 half pints.
