Light Cherry Dessert

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 cups cherries, pitted
  • 1 1/4 cups skim milk
  • 4 eggs
  • 1/4 cup splenda granular, sugar substitute
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 1/2 tablespoons light margarine, melted
  • 1 cup flour
  • 1/4 cup powdered sugar

Recipe

  • 1 preheat oven to 350°f.
  • 2 wash cherries; remove stems and pits.
  • 3 place pitted cherries in an 8 cup oven-proof dish.
  • 4 in the bowl of a food processor or blender, combine milk, eggs, splenda, sugar, salt, and melted margarine. blend until smooth. add flour, blend briefly - do not overmix once flour is added.
  • 5 pour batter into baking dish, covering cherries, and bake for 30 minutes or until top is light golden brown and center is done.
  • 6 sift confectioners' sugar over the top and serve while still warm.
