Trout Without A Doubt

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 lb trout fillet
  • 4 ounces marinated roasted red peppers
  • 8 ounces marinated artichoke hearts, quartered
  • 1 large red onion, cut into eight pieces
  • 1/4 cup kalamata olive, pitted
  • 1 tablespoon minced garlic
  • 1/8 cup good seasons salad dressing mix (made with packet mix)
  • olive oil

Recipe

  • 1 heat oil in large pan with high heat.
  • 2 wash fish in cold water and blot dry with paper towel.
  • 3 brown fish on both sides.
  • 4 remove fish and drain oil.
  • 5 reduce to medium heat and saute onions until clear, but not brown.
  • 6 add garlic and stir.
  • 7 add peppers, artichoke hearts, olives, and stir.
  • 8 drizzle italian dressing over the contents of the skillet, and mix through.
  • 9 add fish, and gently stir around fish, taking care not to damage fish.
  • 10 raise heat and bring to a boil.
  • 11 cover and simmer for 5 minutes.
