Trout Without A Doubt

Ingredients

- 1 lb trout fillet
- 4 ounces marinated roasted red peppers
- 8 ounces marinated artichoke hearts, quartered
- 1 large red onion, cut into eight pieces
- 1/4 cup kalamata olive, pitted
- 1 tablespoon minced garlic
- 1/8 cup good seasons salad dressing mix (made with packet mix)

Recipe
- 1 heat oil in large pan with high heat.
- 2 wash fish in cold water and blot dry with paper towel.
- 3 brown fish on both sides.
- 4 remove fish and drain oil.
- 5 reduce to medium heat and saute onions until clear, but not brown.
- 6 add garlic and stir.
- 7 add peppers, artichoke hearts, olives, and stir.
- 8 drizzle italian dressing over the contents of the skillet, and mix through.
- 9 add fish, and gently stir around fish, taking care not to damage fish.
- 10 raise heat and bring to a boil.
- 11 cover and simmer for 5 minutes.
