Low Fat Tropical Chicken

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breasts
  • 1 1/2 cups long grain rice (i use jasmine)
  • 4 garlic cloves
  • 1 cup fat free chicken broth
  • 1 cup orange juice
  • 2 teaspoons ground ginger
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon light soy sauce
  • 1 (20 ounce) can canned pineapple chunks, drained and reserved 1 cup (about 2 1/2 cups)
  • scallion (to garnish)

Recipe

  • 1 in a deep skillet or pan, sprayed with vegetable spray, brown the breasts 3 minutes each side.
  • 2 set aside on a plate.
  • 3 add rice and garlic to the pan and cook till rice is translucent.
  • 4 place the chicken over the rice and add the remainder of the ingredients, including juice.
  • 5 bring this to a boil and then turn to low.
  • 6 simmer, covered till the rice is cooked about 20-30 minutes.
  • 7 sprinkle with scallions and serve.
