Three-bean Tacos

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 teaspoon olive oil
  • 1 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1 tablespoon chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 garlic clove, minced
  • 1 cup garbanzo beans, rinsed and drained
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup pinto beans, rinsed and drained
  • 8 ounces tomato sauce
  • 12 taco shells
  • 3/4 cup shredded iceberg lettuce
  • 3/4 cup diced tomato
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup salsa

Recipe

  • 1 heat oil in a large skillet over medium-high heat until hot.
  • 2 add onion, bell peppers, chili powder, oregano, cumin, and garlic and saute for 2 minutes.
  • 3 add garbanzo beans, black beans, pinto beans, and tomato sauce.
  • 4 bring to a boil and reduce heat.
  • 5 simmer for 20 minutes or until thick.
  • 6 heat taco shells and spoon 1/4 cup of the bean mixture into each taco shell.
  • 7 top with toppings.
