Ingredients
- 1/2 cup rice, uncooked
- 3 cups water, boiling
- 1 teaspoon salt
- 1/2 cake yeast, softened in
- 1/2 cup water
- 3 eggs, well beaten
- 1/4 cup sugar
- 1/8 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 cup flour, sifted
- oil (for frying)
Recipe
- 1 cook rice until very soft.
- 2 drain, mash, and cool to lukewarm.
- 3 add yeast, beat and let rise overnight.
- 4 in the morning, add remaining ingredients.
- 5 beat again and let rise about 20 minutes in a warm place.
- 6 preheat oil to 365°f.
- 7 drop batter by tablespoons into oil and fry until golden brown.
- 8 drain on paper towels and serve hot.
