Ingredients

- 1 lb red kidney beans
- 1 -2 slice ham (center-cut slice with bone)
- 1/4 cup brown sugar
- 8 ounces canned pineapple chunks (will be used only to season ham and not put in beans!)
- 12 ounces little smokies sausages
- 1 green bell pepper
- 1 tablespoon garlic (minced)
- seasoning salt (to taste)
- hot sauce (to taste)
- 1 bay leaf
- 1/2 large onion
- 2 stalks celery
Recipe
- 1 rinse beans three times with cold water.
- 2 let soak for an hour or overnight.
- 3 rinse ham and put in hot skillet and cover with brown sugar and pineapples and bring to a boil. cook until red and curling. remove only ham from the skillet and cut it into big pieces.
- 4 chop bell pepper, onion, celery and put in crockpot. add bay leaf, garlic and seasoning salt and ham. add beans and water to where it is 2 inches above beans. then cook on high for two hours then low until beans are done (about one more hour).
- 5 serve with rice and cornbread and a few dashes of hot sauce.
