Slow Cooker Red Beans (louisiana Style)

Ingredients



  • Servings: 8

  • 1 lb red kidney beans

  • 1 -2 slice ham (center-cut slice with bone)

  • 1/4 cup brown sugar

  • 8 ounces canned pineapple chunks (will be used only to season ham and not put in beans!)

  • 12 ounces little smokies sausages

  • 1 green bell pepper

  • 1 tablespoon garlic (minced)

  • seasoning salt (to taste)

  • hot sauce (to taste)

  • 1 bay leaf

  • 1/2 large onion

  • 2 stalks celery


Recipe



  • 1 rinse beans three times with cold water.

  • 2 let soak for an hour or overnight.

  • 3 rinse ham and put in hot skillet and cover with brown sugar and pineapples and bring to a boil. cook until red and curling. remove only ham from the skillet and cut it into big pieces.

  • 4 chop bell pepper, onion, celery and put in crockpot. add bay leaf, garlic and seasoning salt and ham. add beans and water to where it is 2 inches above beans. then cook on high for two hours then low until beans are done (about one more hour).

  • 5 serve with rice and cornbread and a few dashes of hot sauce.
