Trinidadian Pumpkin

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 medium onion, peeled and finely chopped
  • 3 garlic cloves, peeled and crushed
  • 1 fresh hot green chili pepper, sliced very thin
  • 1 teaspoon fresh thyme (or 1/2 tsp dried)
  • 2 tablespoons finely chopped cilantro
  • 2 lbs hard winter squash, cut into 1 to 1 1/2-inch cubes
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons light brown sugar

Recipe

  • 1 put oil in a large non stick pan over med-hi heat. when hot add onion; stir fry until lightly browned. add garlic, chile, thyme and cilantro; stir for a few seconds until the garlic is golden. add squash and stir. add 3 tbsp water, cover, turn heat to low and cook for 40-45 minutes or until squash is tender. uncover, add salt and sugar, stir gently mashing the squash lightly. serve hot.
