Ingredients

- 8 -10 sausage casings
- 2 cups oysters, minced
- 1 1/3 cups beef suet, cut into fine shreds
- 1 cup breadcrumb
- 1 teaspoon lemon juice
- 2 eggs
- 1/8 teaspoon black pepper
- 1/8 teaspoon allspice
- 1/8 teaspoon nutmeg
- 1 pinch salt
- 1/8 teaspoon oil
Recipe
- 1 mix all ingredients together. taste for seasoning, especially salt. stuff the mixture into sausage casings and prick each sausage with a fork.
- 2 poach, uncovered, in salted water for 45 minutes; drain.
- 3 brown the sausages quickly in hot oil, and serve.
