Oyster Sausages

Ingredients



  • Servings: 4

  • 8 -10 sausage casings

  • 2 cups oysters, minced

  • 1 1/3 cups beef suet, cut into fine shreds

  • 1 cup breadcrumb

  • 1 teaspoon lemon juice

  • 2 eggs

  • 1/8 teaspoon black pepper

  • 1/8 teaspoon allspice

  • 1/8 teaspoon nutmeg

  • 1 pinch salt

  • 1/8 teaspoon oil


Recipe



  • 1 mix all ingredients together. taste for seasoning, especially salt. stuff the mixture into sausage casings and prick each sausage with a fork.

  • 2 poach, uncovered, in salted water for 45 minutes; drain.

  • 3 brown the sausages quickly in hot oil, and serve.
