Strawberry Lemon Marmalade

Total Time: 55 mins Preparation Time: 40 mins Cook Time: 15 mins

Ingredients

  • 4 cups crushed strawberries (about 4-1 pound containers)
  • 1/4 cup thinly-sliced lemon peel (about 2 medium)
  • 1 tablespoon lemon juice
  • 6 cups sugar
  • 1 (1 3/4 ounce) package dry pectin
  • 1/2 teaspoon butter

Recipe

  • 1 hull and crush berries one layer at a time.
  • 2 combine lemon peel and water to cover.
  • 3 simmer 5 minutes.
  • 4 drain and discard liquid.
  • 5 add peel to prepared strawberries.

  • 13 remove jars from canner, place on a clean towel to cool.
