Onion Marmalade

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 3 cups sugar
  • 3 cups vinegar
  • 6 brown onions, halved lengthways
  • 2 bay leaves
  • 6 peppercorns

Recipe

  • 1 put all ingredients into large, deep saucepan.
  • 2 stir till sugar dissolves and mixture boils.
  • 3 simmer, stirring every now and again for 45 minutes.
  • 4 onions should be translucent.
  • 5 liquid should be nearly all evaporated.
  • 6 set aside to cool to room temp then spoon into sterilized jars and seal.
