Ingredients

- 1 1/4 graham cracker crumbs
- 2 tablespoons sugar
- 5 tablespoons butter, melted
- 4 egg yolks
- 1 (14 ounce) can eagle brand sweetened condensed milk
- 1/2 cup freshly squeezed key lime juice
- 2 tablespoons key lime zest, finely grated
- 4 egg whites
- 3 tablespoons sugar
Recipe
- 1 crust: in a bowl, mix graham crumbs, sugar and melted butter. press into a 9-inch pan.
- 2 filling: using an electric mixer, mix the yolks, eagle brand, key lime juice and zest, until thickened. pour into the pie shell and refrigerate overnight until set.
- 3 meringue: whisk eggs and sugar to a stiff peak. spoon or pipe on the pie and bake in a preheated 350f oven for about 12 minutes, or until golden brown.
- 4 leave to cool on a rack, then refrigerate.
