Low Carb Chocolate Covered Pecans

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 ounce bakers unsweetened chocolate
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla
  • 7 teaspoons splenda sugar substitute, sweetner divided
  • 1/2 cup pecan halves
  • 1/2 teaspoon cinnamon

Recipe

  • 1 mix pecans, 2 tsp splenda and cinnamon in a plastic bowl with a lid and shake until coated.
  • 2 in a double boiler, melt the chocolate and butter, then add the cream and add the rest of the spenda.
  • 3 mix well until smooth, then remove from the heat.
  • 4 stir in pecans, or dip them into the chocolate mixture one at a time.
  • 5 place coated pecans on wax paper or plate to chill, at least one hour.
