Key Lime Pie

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • Servings: 8
  • 250 g digestive biscuits
  • 100 g butter, melted
  • 5 limes
  • 400 g condensed milk
  • 300 ml heavy cream
  • 20 g bitter chocolate

Recipe

  • 1 whiz the digestive biscuits in a food processor until breadcrumbs.
  • 2 mix in the melted butter.
  • 3 press the mixture into the base of a greased 20cm loose-bottomed pan.
  • 4 place in the refrigerator for 30 minutes to firm up.
  • 5 meanwhile, zest and juice the limes into a bowl.
  • 6 add the condensed milk and cream and whisk until creamy.
  • 7 pour over the chilled base.
  • 8 place back in the refrigerator for at least an hour.
  • 9 decorate with shavings of bitter chocolate before serving.
