Key Lime Pie

Ingredients
- Servings: 8
- 250 g digestive biscuits
- 100 g butter, melted
- 5 limes
- 400 g condensed milk
- 300 ml heavy cream
- 20 g bitter chocolate
Recipe
- 1 whiz the digestive biscuits in a food processor until breadcrumbs.
- 2 mix in the melted butter.
- 3 press the mixture into the base of a greased 20cm loose-bottomed pan.
- 4 place in the refrigerator for 30 minutes to firm up.
- 5 meanwhile, zest and juice the limes into a bowl.
- 6 add the condensed milk and cream and whisk until creamy.
- 7 pour over the chilled base.
- 8 place back in the refrigerator for at least an hour.
- 9 decorate with shavings of bitter chocolate before serving.
