Pickled Beets

Ingredients
- 1 1/2 lbs baby beets
- 1 1/2 cups vinegar
- 1/2 cup water
- 1 cup brown sugar
Recipe
- 1 cook beets in salted water until just tender. peel and pack in hot sterilized jars.
- 2 make the brine - combine the vinegar, water and brown sugar in a large pan. bring to a boil and simmer 5 minutes.
- 3 ladle, hot mixture over beets, covering completely. make sure you leave about 1/8" headspace. seal jars & label.
- 4 store in a cool dark place.
