Pickled Beets

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 lbs baby beets
  • 1 1/2 cups vinegar
  • 1/2 cup water
  • 1 cup brown sugar

Recipe

  • 1 cook beets in salted water until just tender. peel and pack in hot sterilized jars.
  • 2 make the brine - combine the vinegar, water and brown sugar in a large pan. bring to a boil and simmer 5 minutes.
  • 3 ladle, hot mixture over beets, covering completely. make sure you leave about 1/8" headspace. seal jars & label.
  • 4 store in a cool dark place.
