Rancher's Quiche

Ingredients



  • Servings: 4

  • 1 9 inch pie shell, unbaked

  • 8 slices bacon

  • 2 tablespoons onions, chopped

  • 2 tablespoons green peppers, chopped

  • 4 ounces sliced mushrooms, drained

  • 2 cups swiss cheese, shredded

  • 5 eggs

  • 2 cups half-and-half

  • 1/4 teaspoon dry mustard

  • 1 teaspoon lemon pepper


Recipe



  • 1 cook the bacon until crisp.

  • 2 cool slightly and crumble.

  • 3 combine the bacon, onion, cheese and peppers in a bowl.

  • 4 sprinkle the bacon mixture in the pastry shell.

  • 5 beat eggs.

  • 6 add half and half, lemon pepper and mustard.

  • 7 mix well and pour over bacon mixture.

  • 8 let stand for 10 minutes.

  • 9 bake at 350 degrees for 45-60 minutes.

  • 10 let stand for 10 minutes before slicing.
